Well, on the flipside, it's almost impossible to find bone-in chicken pieces in Japan. Makes it really hard to make proper chicken broth! I'm glad that you enjoy the recipe! Trust me, Critical! I was DYING while editing this, haha! For three days straight I’ve been craving karaage!! I’ve been too lazy to fry some more, so it seems like my lethargy is keeping me from eating my weight in fried chicken!

Oh yeah, tourist visas will definitely be the last ones to be given the "OK", but you know that Japan is ready to have their tourists back, haha! We actually went to Hokkaido recently for a short trip and although the lack of tourists and crowds were nice in some regards, it felt kind of sad in others. There's just a different kind of energy when the streets are bustling with people! Hopefully when you do end up back here, the country isn't at 120% capacity with tourists! That way you can get more space and won't have to spend as much time waiting in line to buy and eat! But yes, smart to just hunker down and save that money! Then you can make your trip even more epic! Sakura, you're welcome anytime for some triple-fried chicken! Or maybe something even more epicly delicious...! Brunette!! Hope you're doing well!! Correct me if I'm wrong, but do you mean "velvetting"? If that's what you're talking about, I can tell you all about it! Velvetting is a technique used in Chinese stir-fries, mainly, to tenderize the meat. Thinly sliced meat gets mixed with baking soda and corn starch and a bit of liquid like soy sauce, cooking wine, etc. The baking soda is there to chemically tenderizes the meat. The meat then gets cooked by itself in a bit of oil (lots of Chinese take-out places throw it in the deep fryer). The cornstarch cooks around the meat and forms a barrier that keeps the juice inside. This is one of the biggest that most people are missing when they do stir-fries at home and why most Chinese places usually have SUPER tender meat in their stir-fries. Hi Elvina! So good to see you! I know my face isn't as beautiful as Mrs. Eats, but thank you for your sweet words! Yes, chicken breast works as well! I personally haven't tried it, but skin-on, boneless chicken breasts will fry up great! You can try the same time, temperature, and method that I used, and adjust it depending on whether the breast meat is dry or not! By the way, have you had karaage before? I gotta tell you, I love my Popeye's fried chicken, but Japanese Karaage is a solid #2 in my book!

Speaking of Chinese fried chicken, I remember one of the chefs at my parent's restaurant would make fried chicken that was seasoned with Chinese five spice powder. It was SO good! Hi Mon, thanks for stopping by! Glad to have you here! As far as an airfryer, you may be able to, but I would suggest (if possible) spritzing the chicken pieces with a bit of oil on the outside so that the crust can brown evenly. I don't know what time and temperature you would use, so you would have to experiment on that end. I think one method that could work is to go through with the actual frying process, but only do a single fry for 1 minute, then airfrying it the rest of the way until it's cooked. The crust will be coated with enough oil for it to be "properly" fried, but it won't absorb as much oil. But at that point, you might as well go through the rest of the fry with the oil. We use our airfryer to reheat karaage all the time and it works great for that, but just never tried it to actually cook karaage because the triple-fry works so well!
