Greeting from America, Again another very nice dish you prepared. The color, the doneness on the ribs, the amount of sauce on the ribs AND on the plate was just prefect not too wet and not too dry. I did this dish in a carbon steel wok instead of a cast iron wok, at the last minute when the sauce was about to dry up turning off the heat to prevent burning of the high sugar sauce was very important, a carbon steel wok react to temperature changes very quickly while cast iron wok still retain enough heat to burn the sauce.
