From what I understand, the difference between the light and dark is that lightsiders do the force's will, while darksiders rather want to control the force as a tool. Everything else is just an evolution of that. Also, i think the sith are so racist in the expanded universe cause the original dark jedi that were exiled and took over Korriban were human and they just developed a superiority complex after essentially becoming the new aristocracy of the planet.
