So i gather the heat will "keep on crankin'"some heat even after you mentioned 5 minutes ago it stopped smoking and you were out of fuel source?

Is it safe to leave overnight and cook? I've seen people have flare ups.. does the pan catching the droppings eliminate the problem?

When using the snake method, I would be careful using a full chimney of lit coals to start it. He is using the 26 so there is more space but it’s tough to keep the temps down if you start with that much heat. I usually use 8-10 lit coals at the front of the snake and use that vents to regulate temps to 250.

Yes. The vortex works great with the 22.5 kettle. Love doing chicken wings and individual ribs on the volcano cone.

good luck. if you don't have a good understanding of your smart phone. you will hate this product. i had to send it back and then it cost 40.00dl to send back. thermoworks told me there is a way to work around so you did not need a smart phone. they were wrong. even lds lies. oh well. hate this company.

Two observations after watching and reading several reviews on this product. The high CFM of this unit is WAY overkill for a kamado style cooker, because they are already super heat efficient. To address the temperature overshoot many people experience, the manufacturer now has a seperate fan opening cover for the Billows that has an adjustable vent, so you can stop down the intake. For a kamado style cooker, it seems that a better option is a lower cfm variable speed fan

Hey, what happens if your smoker goes above the set temp? Does billows do anything to bring it down or does it just shut off? I don’t have a billows, but my temp usually holds well until I open the lid and let in more oxygen. Then my temp spikes and I can bring it down for a bit. I have a Weber Smokey mountain

Love it; try this on a butt; after you pull the meat, mix in dark brown sugar, your favorite BBQ sauce, and apple cider vinegar to taste until you get the blend perfect. Sweet and Sour mixed. This is the common South Georgia BBQ pork.
