I forget what it's called so I'm just going to make up a new name for it, but Goku is a progressive fighter, meaning that he starts at his weaker forms and slowly goes up to his stronger, and eventually strongest forms. Goku also has limits to his power. Saitama on the other hand broke his limiter, meaning he isn't even completely bound by physical laws anymore. He doesn't have infinite strength, but instead infinite potential. That means that Saitama would be able to match Goku's power before he is able to get to his next form. Since Goku is a progressive fighter (and has limits) and Saitama has no limits to his potential, Saitama would have plenty of time to adapt to Goku's power level, and eventually get more powerful, allowing Saitama to win. So unless Goku starts at ultra instinct or something, Saitama would have plenty of time to adapt and overcome Goku. Feel free to reply on why Goku would still win so I can say "I don't care."

You made a mistake. The accepted basepower for planet destruction is 10000. Goku namek saga is 90k in base, and assuming he could go up to 5x kaioken because he got alot stronger, his power is 450000. Ok, so this means goku could destroy 45 planets, which is easily multi solar system level. Then, zenkais from ginyu grant goku 3 million bp. So, we can safely assume goku is tenth galaxy level based off the fact that 3 miilion divided by 10000 is 300. With SSJ, this is 150m divided by 10k equals 15k. This means goku, late freeza saga, is probably galaxy / low multi galaxy level.
