I think From Software simply doesn't care about balance. Otherwise the game would be balanced, as they have one of the most experienced teams in the industry. I mean sure there is some base level of balance in the game but it's mostly arbitrary, because with its game mechanics being as volatile and emergent as they are, it's simply a humongous task to balance it all against each other. So playing with Rivers of Blood is pissloweasymode or using hemorrhage in general and if you like to play this way then so be it. It's a game after all and if this is where you can find the fun for you then this is good.

If you actually clear ever area progressively ( Limgrave, Godricks castle, luirnia, Caelid, Altus platue, etc.) Then you level up and get gear for each successive area and bosses. If you think you can fight a remembrance boss of a given area without fully clearing and finding EVERYTHING first then you're lazy and don't have the right to call yourself elden lord.

Grave Wardens were better than SsTb before the Rouge nerf. By a wide margin. Pyromancy was and still is leagues ahead of sorceries. Rapport, Hidden Body, Pestilent Mist, Dorhy's, Chaos Orb and Black Orb gives you the best toolset for literally every encounter. And you can use everything with Pyromancy Flame and Crystal Chime with no drawback. I'd argue miracles are better than sorceries because Great Heal heals more than an Estus and literally has triple the Estus efficiency. Stake, GLS/SLS and Dorhy's cover all your encounters while sorcs have to deal with magic resistant enemies and dark sorcs have low efficiency until that big boy from Ringed City.
