Cooking fennel is what takes out that strong licorice taste (not just because you add other flavors) and just leaves it really sweet and yummy. People who don’t like raw fennel in a salad probably would like it roasted.

I was just thinking, "I should pull up the row of beets in my garden before they get woody, but what am I going to do with them all?", and ta-da!! This baba ghanoush looks so yummy! I love using dips as sandwich spreads as well... would go well with my garden cucumbers and tomatoes on a sammie!!

I absolutely crave babaganush and got some from Whole foods. After I got it to work and took a couple of bites of it, I found dairy in the microscopic ingredient list. With? My other favorite thing in the world is beets. I am making this dip Pronto! Thank you Lauren. You never dissapoint!

I’m obsessed with the fennel dip. 2nd place comes the beet babaghanoush. Sunflower dip came out too gritty. Not sure if it’s because I let the seeds soak in hot water but then I couldn’t make them right away and put them in the fridge over night.

I think Im a "reducetarian", my hubby hates it when I say I'm mostly vegan lol. He's vegan and tells me, "your either vegan or you're not!". He's right but, I'm mostly vegan 🤷. Sometimes I say I'm vegetarian so people can understand better. But I haven't eaten red meat in 4 years and it's been a long time I don't eat chicken or fish, maybe 2 years. I don't drink milk or eat eggs on their own but if Im at a party or something, and there is cake and cookies or some snacks with dairy or egg in it, I will sometimes eat it, especially if the only vegan option is the one thing I made and brought. I guess I have poor self control.
