We can see how he is sharpening one side,but other side he didn't show properly,can we more guidance about proper sharpening double-edged knives?

Thank you for your comment! Apologies for the delay as approvals are required for comments. Regarding sharpening the back side, there will be an explanation starting around 14:00.
