RECIPES FROM THIS VIDEO:
MONDAY:

-1/2 onion
-2 small red peppers
-100g vegan chicken
-1 serving of pasta
-1 TBSP tomato paste
-1 TBSP balsamic vinegar
-100g tomato sauce
-1 TSP agave
-salt, dried Italian herbs and pepper to taste
-vegan feta and cilantro to garnish
Fry onion, vegan chicken and peppers in some oil until softened.
Meanwhile cook the pasta in boiling water.
Add the tomato paste to the pan and deglaze with balsamic vinegar.
Add the tomato sauce and season.
Once the pasta is al dente, stir it in with some pasta water and finish cooking it in the pan
TUESDAY:
-------------
-280g frozen spinach, defrost in a pot then squeeze out the excess water
-2 blocks (400g) tofu
-3 TBSP olive oil
-4 TBSP vegan parmesan
-salt to taste
-1 cup to 1 1/2 cups of flour (130-200g)
Mix the spinach, tofu, oil, salt and parmesan in a food processor until it forms a green dough.
Stir in the flour and shape into little balls.
Roll them in semolina.
Cook in salted water until they float to the top.
Serve with tomato sauce and more vegan parmesan.
WEDNESDAY:
-----------
-3 potatoes, cut in wedges
-1 TSP oil
-seasoning of your choice
Air fry at 200C/400F for 15-20mins.
-veggies of your choice
-120g tofu
-1 TSP red curry paste
-juice of 1/2 lime
-1 TSP agave
-salt to taste
-1/4 cup (60ml) coconut milk
Fry the veggies and tofu in some oil.
Add the remaining ingredients and let it simmer for 10mins.
Serve on the potatoes with coconut yogurt and sriracha.
THURSDAY:
-------------
-100g orzo
-1 zucchini
-1 carrot
Cook the orzo and fry the veggies in some oil, season with salt.
Dressing:
-2 TBSP kimchi brine
-1 TBSP sesame oil
-1 TBSP agave
Mix then add to the orzo and veggies.
Add chopped cilantro and stir everything to combine.
Gochujang tofu:
-200g tofu, torn in pieces
-1 TBSP corn starch
-salt to taste
-a plug of oil
Mix and air fry at 180C/360F for 15mins.
-1 Tbsp each Gochujang, vinegar, and agave
-2 Tbsp ketchup
Heat up until thickened and stir in the tofu.
Serve over the orzo salad.
FRIDAY:
-----------
-1 TBSP peanut butter
-1 TSP gochujang
-1 TSP soy sauce
-1 TSP vinegar
-1 TSP agave or maple syrup
Mix and add some dumpling cooking water to make it „brothy“.
-1 serving of dumplings
-1 big carrot, chopped
Cook in water 4-5mins.
Add to the sauce with cilantro and mix.
