I place a rolled kitchen towel under the squash, just as you would do with a bowl, that way it’s pretty much stabilizes it. Much easier to cut much safer. I love your videos. You truly a world-class chef.♥️

Dear Chef, We must be telepathic. This morning I noticed a butternut squash in my vegetable locker. It's been there for months, I think I had planned a curry with it. Today I was going to make a prezzamole and fagioli soup but I had some leeks, no carrots so I used the squash to make a rich creamy soup. I whizzed it up and added cream with cayenne. I'm going to start this evening's meal with a liquid aperitif first.

I have a tip for you! I have been baking acorn squash with butter for years and this is the way you can cut it in half. First I use my chefs knife so no sawing is needed. Take a slice off the bottom so it will sit flat on the cutting board with the stem is pointing up. Angle the blade slightly beside the stem so the finish of the cut will be somewhere off center at the bottom, start the cut by moving the knife in a rocking motion while pushing on both ends of the knife and once you get the cut started it is very easy to finish the cut. Seriously try this it works like a charm. Use an ice-cream scoop to remove the seeds. Once you do a few it gets easier.

The seeds can be roasted the same way as pumpkin seeds.I would suggest flipping the squash halves into a bowl and scooping the cooked flesh out.I have grown and dealt with alot of winter squash.Kabochas are real beast to cut.This looks delicious.I will have to get stuff together and try it.

Squash seeds great for a lot of things!! They are nutritious and delicious, roasted for about 25-20 minutes at 375-400, with salt and olive oil.

made this today. usually i use kabocha squash but this was spectacular. i didn't realize that i was out of sage so i subbed margoram. i also had to use apple brandy at the end and it was brilliant. my other sub was yogurt for sour cream and it was also friggin' brilliant. it did take all day, but now i have soup for 17 years in my freezer! Bless you chef for all that you do to make this hard world a yummier place. you warm my heart.

The day you uploaded this my stepdad mentioned how his late mother would make roast acorn squash as a kid and it was the best thing. So when I came home and saw this recipe video I knew I had to make it. There's just one thing I'm confused about, how do you manage to get the squash into the soup without eating it? I had something like 2 pounds more squash than the recipe called for (they were HUGE, size of your head!) So I set some of the roasted acorn squash aside as a snack while I waited for the soup to simmer and it was amazing, and I only used salt, pepper and regular vegetable oil, no fancy garlic infused anything. I feel like I gotta make up for time lost looking at acorn squash like they're ornamental, fool that I was!

Mother had a soup game: " Stone Soup ". During the harvest season She would put a very clean, safe stone in a pot and tell us it was lonely in there and the soup would not taste good with just water and a stone. It needs stuff from the garden. We would do a vegetable treasure hunt finding vegetables etc., then we would clean, and prepare them. She would take out the stone, add seasoning and meat if She desired. Always great fun and always came out wonderful served with fresh baked bread, biscuits, or cornbread. " Fragrance of Memory "

I love your videos and recepies Jean-Pierre. I'll try this one, as butternut squash with coriander soup is one of my favourites. I cook the whole squash in an oven for 20 minutes first, then it cuts quite easily, and is not mushy. I've never seen an Acorn squash before. Look forward to making this.

I went to the tool store (Harbor Freight) and bought a 5 dollar machete. A BIG knife about 18 inches long and that is what I use to cut watermelons and butternut squash in half. You can use both hands but be careful about getting your fingers under the semi-sharp blade.

Chef John I logged in just for you today. Love your videos by the way and watch as often as I can. Anyway, had to tell you, this morning I made a version of this based on your video. I make butternut squash soup in large batches and freeze in servings for the winter for hubby and I, it's just the two of us know so freezing has become my friend. Anyway, this morning I took a butternut squash, a very large sweet potato, and the rest of your ingredients ( I never used the rest before except onion and roasted garlic). Half way through blending I remembered I have Chipolet in adobe sauce so I added a couple and some sauce....... OH MY WORD, TOOK IT UP A NOTCH. If you haven't tried it you should, IT'S DELICOUS. Can't wait for a snowy day to heat this up with some spicey italian sausage balls and my regular toppings (green onion, pumkin and sunflower seeds, a drizzle of good olive oil and roasted cauliflower).
