It's called a Diamond Step. It's basically a switch stance, but ending in a nuetral stance with your weight over your lead leg. (Lateral shuffle-stance, lateral shuffle-stance, lateral shuffle-stance-diamond step-lateral shuffle). What you are describing Kahbib doing to Macgregor is called short stopping I believe. Jon Jones vs DC for more examples of this. Besides evasion, engaging is also possible here, after the diamond step, by shifting the hips into a cross, rather than lateral shuffling out. A great partner drill would be using this sequence against an opponent pivoting in place, as an example of defense to offense transition. Awesome video and beautiful footwork! I will be drilling this asap.
