Cast Iron Chaos

Күн бұрын

Even though my cast iron collection is larger than what you see in most kitchens, I still succumbed to temptation and ended up buying the Lodge Cast Iron pie plate. Since Lodge opened its new second foundry, they've been releasing newly designed cast iron pans at at the rate of several each year. Now in 2020, they've released a new line of cast iron pans especially meant for baking, including and a cast iron pan especially for making pies. And this may have helped to create what I feel was my best apple pie ever, one that I'm proud to show here. Is the new Lodge Cast Iron pie plate worth buying? Take a look and see for yourself. The recipe for this pie can be seen on my Web site, Cast Iron Chaos, at: www.modemac.com/wiki/Magical_A...
I should say Lodge did not send me this pie pan as a promotional gift - I bought it myself, because I'm a satisfied customer, and I'm proud to use Lodge cast iron in my kitchen. The Lodge pie plate is a great addition to my collection, and I'll be having a lot of fun making more pies with this.

Finished at last. This video took far longer to complete than I'd expected, for two reasons...first, it takes a lot of steps to produce an apple pie, and I was making not one but two pies, *plus* some information about the pan itself. Second, this was actually the second set of pies. I'd made two lattice pies at first, but I made a mistake with those pies. The lattice pies exposed a lot more surface space of the apples to the heat of the oven, and the apples turned out more dry and firm than I wanted them to be. So, I had to make a second set of pies. That's also why the first pie shown here, in the Lodge pie plate, is a full crust pie rather than a lattice. With a full crust pie the apples are completely covered, and they can steam and braise in their juices as they cook. Regardless, I was quite happy with both pies here, and I'm glad I took the time to make this video without rushing it. Thanks to everyone watching this for your patience.

Hi: I bought one of these pie plates for my daughter in the UK, who is a keen baker. She made a pie with butternut squash, chard, red onion and feta and said: "The pie dish is amazing!" I enjoy your knowledgeable and quirky channel, and your apple pie recipe looks stunning!

Mmmm. That pie pan will be a fantastic addition to my bakeware. So will the 9x13. I like eating my pies out of one of my 6.5 inch skillets. If leftover, just pop the mini skillet into the oven with a pat or two of butter until the butter melts. Yummy. I think the Lodge cast iron pie pan is the best looking pie pan I have ever seen. Thanks so much for another video showing this pan.

Thanks for the review. I also succumbed to buying more when I tell myself no more until we sell more. I've had only 3 cracked grizwold come through my hands but I didnt crack them. Used one already for the test to see if itll hold. And it worked. But getting ready to sell more. Thanks again for the great video.

The temptation is real. They have an awesome sale get 2 pie plates for 39. So.... I might have to put in an order. What's funny is cast iron last for ever. Still got the set I got for from wedding and that was 23 years ago. You tell your self "I'll never have yo buy another skillet or pan again. Not necessary you just end up collecting them,because you like cooking or baking in them so much. I even have 2 case iron bread pans. My daughter just use it to make gluten free white white chocolate banana bread, so good.

@CastIronChaos Eric, recently, from the King Arthur Baking team, I learned that there’s a special PASTRY Beater attachment for the Kitchen Aid stand mixer that, better, assists blending the fat content (butter and/or shortening) while retaining those nice little flake producers and not over-working the pie dough.

Thanks for this tip! I have a wide variety of Kitchen Aid accessories and use mine almost for an amazing array of tasks. The pastry beater attachment was a new one to me! I love that KA stand mixers have a universal power hub and they have made sure that all attachments that go into the power hub will fit all of their stand mixers clear back to 1919!

Much appreciated! First pie I've ever made from scratch. I was surprised that I could even make this. I may have baked it too long as the crust was slightly stale, but the apples were cooked to perfection. I'll be making the pecan pie very soon. Love from Canada 🇨🇦

my first time running across your video! Enjoyed it VERY much!! Like you, LOVE cooking with cast iron! I have my grammas( both of them) cast iron pans. Have been making a burrito filling( chuck roast, onion,ortega chilis, bell pepper,simmered with the usual spice suspects we use in Mexican cooking, once simmered until the meat is tender, cover with LOTS of cubed montery jack cheese, till gooey melted. Roll in giant flour tortillas. Serve with refried beans. top with the natural juice and a bit more filling. garnish with sour cream, avacado. Salsa if you desire. :)

Actually, I use the pie plate as a medium skillet. The box says it's not for stove top use - but that's just because it has no handle. Just use mits, don't burn yourself, and it works great.

Oh my gosh, my husband and I loved this video. Your voice is spooky as crap, lol. You could narrate scary stories that keep you up at night but, I digress. We have an unhealthy collection of Lodge products as well. Living in TN, we have to support them…right. We just purchased the loaf pan because everyone needs a cast iron loaf pan. We made homemade baked beans that were out of this world. We also purchased the micro skillet. Yes, I know it is an ash tray but we don’t smoke so we made a micro cornbread. Afterwards we realized they make cool “ decoration” on our fireplace so we are headed to buy a micro skillet twin so we will have one for each side. The pie plate is brilliant even though we don’t make pies but hey, we have chickens so why not fry a few fresh eggs in it? 🤷‍♀️ Thank you for convincing me that I need to add this to my collection. It is likely that we will be purchasing a saucepan in addition to the other items. I don’t think I knew that this was an offering until I saw one in your collection.

Ok funny.. making leftover roast beef pie today .. in my cast iron pie pan :) first time using it.. was a Christmas gift.. not lodge . But half way decent weight and such.. and it was a gift.. so will see . Benifit of a dedicated pan when you have other skillets? Um well some of us don't have spare skillets to use and bake a pie in.. :)

Is it me or is the Lattice pie you cut at the end also in the Lodge pie plate and not the same one you baked in the #6? Either way, the pies look great! I almost bought the pie plate when I was at the Lodge factory in Tennessee earlier this month but decided to get the casserole pan instead since we make way more casseroles in my family than we do pies. I will be getting one after this video tho....LOL!

This is actually the second set of pies, which is one reason why it took so long to finish this video. I made two lattice pies before this, but I made a crucial mistake: I didn't cover the pies before baking, and the apples were too dry. Actually, I'm already planning another video just for a lattice top pie because of that.

I bought the large cast iron pie pan today. I see you used metal utensils on it. That wont scratch it or ruin the coating ? This is my first cast iron. I wanted a cast iron for so many years and I finally bought one. I'm looking forward to using it.
@castironchaos
@castironchaos Жыл бұрын
Despite what some may say, metal utensils are fine in cast-iron pans. The worst that can happen is the seasoning may be scratched, and that is no big deal. Continuing to use the pain will reinforce the seasoning; or at work, you could see is in the pain again. The iron itself is just fine.

@castironchaos Hi Eric, Watched this excellent video last night and noticed your apple peeler, slicer, corer device appears identical to the one I had that didn’t work any more so I dumped it a few years ago. Today, I sold my vintage 60s era Corelle plates and bowls to a nice lady in our region. She brought me a huge sack of beautiful, freshly picked organic apples (gravenstein) as a nice gift. So I just got off Amazon to get a new apple machine that had super customer reviews. It’s somewhat different that yours and has 4 folding legs. Will post a photo on our “Culinary Fanatics” FB group. Love all your excellent videos.

Sounds a lot fancier than mine. That apple corer is one of many items in my kitchen that were gifts from my parents, but I think they paid all of $10 for it. :P

Hi! Great video! I just bought one. I read somewhere (it stuck in my head anyway...note to self) that the pie pan shouldn't be used on the stovetop because it's thinner. Your thought? I also bought the muffin tin and bread pan🤪

It’s essentially a cast-iron skillet in the shape of a pie plate. I have used mine for making eggs and bacon. Go ahead and use it on the stove top.

I always wondered if you can answer, baking with cast iron I always heard mixed reviews of preheating the pan and not preheating it with other things? In terms of baking, do you have to preheat or not for baking mac n cheese, pies, brownies, breads etc ?
@castironchaos
@castironchaos 3 жыл бұрын
Most of the items I have baked in cast-iron, I did not pre-heat the pan and it turned out just fine. The one big exception to that is cornbread. :-)

Love your show but disagree with you. I have simple stamped steel pie and cake tins. They have lasted for 50 years of cooking and I still use them. I also use aluminum tins as well and they have served me for over 30+ years of cooking. I love my cast iron cookware and I make a lot of corn bread in my skillets, BUT that pie plate is nothing but a glorified show off piece of equipment that I would never need.
