I think about all the great recipes and techniques you show us every week, but one is always there that I've not heard called out - mise en place. You always do the prep and use those little glass bowls/ramekins to hold the ingredients - that is a huge help when cooking!!

I just made this and it took me an hour. Very delicious and perfect spicyness! I used white button mushrooms instead of shiitake. I didn't have doenjang or kalguksu, so I used to red miso and udon and it turned out great

Mr. Aaron, I have a question for you I hope that you can please answer and shed some light for me: Miso soup is a daily food staple of mine. I make my dashi from scratch instead of using Hondashi season so it’s legit as hell for me 😂 My favorite way to eat it is when it’s fermented-vinegar-spicy so I use red miso with lots of koji, sriracha sauce and rice wine vinegar. My question!: How does Korean soy bean paste differ from Japanese? And, instead of using siracha, would adding gochujang help replace this? Essentially I want a deliciously spicy, vinegary miso and so far I’ve achieved this, but wanted to try something new and take it up a notch

Miso is lighter and sweeter while doenjang is a little funkier, stronger and more on the savory side. So it’s not a good idea to substitute doenjang with miso every time. But since this recipe calls for only a small amount of doenjang and we still use some gochujang, I think it’s alright. Shiitake mushrooms are hard to come by where I shop, but there's a really helpful alternative I would suggest. Getting a package of dried ones. I found a large package of dried one's at a Chinese market with 20-30 for not a lot of money, also available online surely. It takes a little time to soak them in hot water, but they also double in size. And you can just keep them for ages. I've got a couple I'm about to slice up for doenjang jjigae for dinner.

Sadly the hardest thing for me to find are the lovely Korean Chilies. I love their flavor and freshness so much. I use Jalapeno and Serrano as swaps but I mean really, they don't taste the same. Maybe next year I should try and grow my own Chilie peppers. I know they aren't a must have but I love them so much! I will definitely make this.

Me and my mum "mmmm"ed non-stop the whole time eating, she said she could smell it from upstairs when I was cooking! My mum felt injustice for my brother and dad so now we're making it the 2nd time, doubled!!! I highly recommend marinating the beef way beforehand, it'll make a huge difference! I followed a shaking beef recipe for the beef and just cooked it and minced it and added the sauce. So delicious! It'll be even better if I added mushrooms but I didn't have it. 😢 I followed the beef marination from 'Gaming Foodie' if anyone is wondering!
