BIBIMBAP 🇰🇷 Vegan world tour pt. 1🗺🌱

RECIPE (3-4 servings, 40min prep time)
-1 part rice, washed
-2 parts water
-a pinch of salt
Cook on low until nice and fluffy.
Veggies:
-3 large carrots
-400g mushrooms
-200g chard or spinach
-1 Tbsp oil for frying
Finely chop everything and fry in some oil.
Season to taste
-1/2 cucumber
-1 Tbsp each soy sauce and agave
-2 Tsp vinegar
-1 Tsp chili flakes
Mix
Protein:
-200g firm tofu
-1 Tbsp sesame oil
-2 Tbsp soy sauce
-2 cloves minced garlic
Mix and marinate for 30min.
Then fry 4-5mins.
Sauce:
-2 Tbsp Gochujang
-1 Tbsp sesame oil
-1 Tbsp water
-1 Tbsp sugar
-1 Tsp vinegar
-1/2 Tsp garlic powder
-1 Tbsp sesame seeds
Mix and assemble everything in a bowl.

I am Korean and the beauty of bibimbop is that you can add anything you want-you can just mix all the left over side dishes in your fridge and top it with sesame oil alongside with soy sauce or guchujang. You nailed it!!!

Could you do a world tour of originally vegan dishes next? Showcase dishes that need no substitutions/no veganizing and are staples of the region's cuisine. That would also be a great idea for a book.

I love korean tradition and food... Being an indian..its a heaven for those who want vegan diet... I cant say particularly one dish but every traditional dish here is vegetarian and nutritious ... Modifications can be done to replace dairy products and honey...

Syrian mjadara is vegan and so so sooo good. There is a version of it with burgul and another with rice. My favourite is the burgul one. It is usually served along with a side dish made of yogurt, a bit of garlic, shredded cucumber and salt (might need some cold water). You can also serve it along with a salad. Literally so good.

From Brazil: feijoada (black beans stew with pork, usually bacon, smoked sausage and ribs)! The side dishes are white rice, farofa (fried cassava flour with bacon), sautéed collard greens and orange slices. It’s a comfort food and super heavy hahaha

Yes! I am vegan and the first time I met my (brazilian) family in law, they made a vegan feijoada. They used tofu, seitan and false bacon. A combination like that at least. It was super good and filled my stomach for so long ahah

i dunno if you have jackfruit there but filipino ginataang langka which is jackfruit simmered in coconut milk with some vinegar and ginger. perfect accompaniment to salty, fried dishes

From Portugal: Bacalhau à Brás (Codfish à Brás) - and there’s a lovely vegan version recipe done with leek so we call it “Alho Francês à Brás” (leek à brás). And if you want to try something sweet you should definitely go for the most typical cake of Lisbon: Pastel de Nata (also known as egg tarts or custard tarts - there’s many vegan version recipes of it to look for!) :)

Sri Lankan food is essentially vegan as we use don't use dairy like ghee or paneer but instead use coconut oil for frying and milk for cooking. While people eat meats and seafood, you don't need to substitute them as there's an abundance of vegetables and greens to make up for taste, nutrition and variety.

I'm Korean. In fact, the origin of bibimbap is vegan food. There's no meat in it. It's a food that the common people or slaves eat. Bibimbap couldn't be put in because the meat was expensive, and the side dishes left by the yangban and the vegetables left after farming were mixed with rice and red pepper paste sauce. The original bibimbap is a vegan food, so you can enjoy it.

An autumn dessert from Ukraine: sweet pumpkin porridge 1. boil the pumpkin in nut milk until soft 2. beat with a blender, add millet and wait until the cereals are cooked and the porridge is thick 3. add any seeds/nuts (preferably pumpkin seeds :)), dried fruits and a little bit of sweetener of your choise but it's already pretty sweet anyway quite healthy and nutritious, i think and thanks for your videos!

Hi, I’m from Vietnam and the vegan bun rieu (bún riêu chay) is a very interesting twist on the soy milk (you add acid like citrus juice or vinegar to soy milk for it to clump up to immitate the river crabs in the usual bún riêu)

Aloo paratha with vegetable raita, chole kulche, paneer tikka, soya chaap, dosa/idli/vada with sambhar and coconut chutney, veg thukpa, vada pav, pav bhaji, dhokla.. Ohh soo many things... Even the simplest khichdi and daal chawal have different version. .. Every states speciality

Enjoying your food adventure! I'm a Bangali/Bengali from Bangladesh. Please try the Bengali version of "Luchi-Booter Daal" or "Paratha-Aloor Dum" - the everyday lighter versions not richer festive versions. (luchis are fried breads smaller than Poori or Bhatura and Booter Daal is a lentil curry with smaller yellow chickpeas) Enjoy!

You should make kålpudding with boiled potatoes, löksås, and lingonberry jam from Sweden :) The only Swedish food I ever see is meatballs, and kålpudding is so much tastier and an old classic

I recommend adobong sitaw! It’s like vegan adobo but with long string beans. Just do the usual process of adobo but idk if sitaw is available where you’re from so green beans will do just fine. Another vegan option is kangkong, it’s very good and i hope you’d give it a try!!

If you want to know more about the dish, it’s sour and salty and has a bit of sweetness. You should be generous with garlic and even make garlic fried rice if you want the dish to taste better cause in filipino cuisine, garlic is like money, it’s never enough lol. Anyways, you could optionally make it a bit spicy using thai chillis if you want, and finally, adobo in genral tastes better the next day, so you could cook a lot if you want to.

Hmm vegan? Try indonesian dish! Gado gado which is salad with peanut sauce or perkedel ( potato steam with fried garlic, shallot, and flour. Shape into small balls and fried them again !) Or if you crave something sweet try avocado juice or fried banana! Yum

Adobong Tokwa (Tofu Adobo) Adobong Kangkong (Water Spinach Adobo) from the Philippines 🇵🇭! These are accidentally vegan, and has been eaten for centuries even before the Spanish colonization. The secret to a good Adobo is the sauce: equal parts of cane vinegar and soy sauce, whole peppercorns, bay leaves, a lot of garlic, and chopped onions.
