Just been to Guiyang last month, from 遵义 I ate 乌江鱼 and in the city we went to 南门's 肠旺面. We had to stand beside the table watching other people eat, and when they leave we had to rush to sit down to catch a place to sit. That was very delicious, and as you said, I feel it IS a bit more spicy than us in Chongqing.

if you want to try spicy food in china, definitely don’t miss Jiangxi, I think that is the most spicy province in china. Also they have one of the best soup in china(as a guangdong fella, I think they can be compared with guangdong soup), lots of history, lots of fun things to see!

dont know if someone else in the comments said it, but the fish is most likely not alive anymore, its just that the salt and other stuff in the stew is causing a reaction that causes the nerves to send signals, which in turn makes the muscles go crazy. same effect can be done when u sprinkle salt on a dead frog

I always want to see food from my hometown in this channel. I was so glad you enjoyed them. One of the special ingredients in Suantangyu (酸汤鱼) is called Mujiangzi （木姜子). Kinda hard to describe what Mujiangzi tasts like. But it gives the dish some extra freshness. The dipping sauce is aslo Guizhou's special. The chilli is called Hulajiao (糊辣椒), which is made by bake red peppers near the fires. The dipping sauces are mostly soup-based in Guizhou, rater then oil-based in Sichuan. Guizhou's hot pods are generally less oily than Sichuan hot pods. Guizhou's hot pods are more about the base soup. Sichuan hot pods are more about the oil. Too bad I cannot go back to Guizhou at this time. Otherwise I would be happy to be your host. Maybe next time 😊

I loved seeing you in Guiyang. I lived there for a year, and absolutely fell in love with that place! I miss the Siwawa, and we also used to enjoy watching them make the rice 'tortillas' for it on the street. That saying about the spice is so true. At first we tried to avoid the spice, and people were so concerned that we wouldn't be healthy. After a while we really upped our spice game and enjoyed the wonderful flavour!

When I used to go out for hotpot in Chongqing we would each have a crate of beer next to our chair. And by the end of the meal there were only empty bottles in that crate! LOL! And for those who have not eaten fish in China, it is not filleted (that is, the bones are not removed), so be careful.
