The reason there is no potato in this recipe is they were using it to shoot the video.

Watch the whole video. Bobby Flay is one of my favorite chefs. And the pressure cooker is on my wish list and could make me pretty darn happy to cut down the demand on electricity in addition to a microwave. If something cooks fast, then less fuel or electricity then lower bills. It might seem like little in one time but it does add up over time.

my parents leave for the south over winter. a big part of that is the cost of propane! so, i agree. also, during the summer, it cooks shorter and uses less AC to keep cool. but still falls apart, even fat roasts

After cooking in the pressure cooker, caramelize the carnitas on a sheet pan under the broiler for five to ten minutes. Then they will be perfect. Pour the reduced sauce on top, serve it up. Oh, so much better!

The cooker is a Frieling Sitram, very good cooker, but at $250, it's beyond many budgets. America's Test Kitchen recommends the Fagor duo 8-qt, at about half the price. And yes, the link and ad for OpenSky feels like a bit of a bait and switch.

On my pressure cooker it states to cook pork chop 1/2 inch thick up to 3 pounds for 5 minutes. 40 to 45 minutes I believe is too long to cook. A roast is that amount of time but not pork cut into pieces. Correct me if I am wrong.

That is just to get it done - not super tender like what Bobby did with his!

Carnitas aren't so hard. I usually do pork shoulder in the slow cooker, but a pressure cooker also works. I usually do it somewhat plain for tacos and pulled pork sandwiches . Pork butt/shoulder is about the cheapest thing going these days.

Alot of people are scared of these pressure cookers, Buy an electric one and it does the job for you. Pressure, timer, browning unit, simmering, it has quite a bit of info on it. When it is done, it goes to warm. Never an explosion. No fear.

JtBaabs Just bought one to replace my defunct slow cooker. Can't stand using the oven in the summer, so it will pay for itself in July. A barbecue purist would disagree, but .99/lb. pork shoulder turns out quite well at low heat.

at 1:15 where do you get or buy the pepper grinder

Carlo whittaker Bed Bath and Beyond, Amazon or any specialty kitchen supplier would carry a variety of pepper grinders. Look for ceramic grinding mechanism, ease of dismantling for cleaning, and not too big so it can be used at table. OXO makes several styles. Or you can use a mortar and pestle. Or a hammer with pepper corns on a zip lock freezer bag over concrete. I use pepper corns whole in soups and stews.

Fagor should be a good choice. WMF or Kuhn Rikon if you feel like spending some more money. I got the Kuhn Rikon and I love it! If it is good enough for Heston Blumenthal and the guys from Modernist Cuisine, then it's good enough for me.

If you "just bought a pressure cooker" then it's a little late to be asking for suggestions, isn't it? That said, a subscription to the America's Test Kitchen Web site could help with future purchases. They do cookware equipment tests, food taste tests, etc. and publish the results. They usually list both a "Top Pick" and a "Best Buy" when there are big price differences.

He's very successful, that speaks for itself. Will all his food be perfect? No, but he must be doing something right, he basically owns the food network.
