Yes agreed! I've worked in so many kitchens where chefs tell me 'No man you have to leave that pumpkin soup out on the bench and wait for it to cool down, then refrigerate it later, I'm a chef I'm always right blah blah blah' But then I worked for a chef who wasn't an idiot and we both agreed that if we pressure cook a soup to boiling point, blend it and then quickly cover it with gladwrap and refrigerate it BEFORE it cools down, we're actually maintaining a completely sterile environment for the soup! All the bacteria is killed in the process of cooking and kept out by covering and 'fridging' afterwards. Proof? The soup would last a hell of a lot longer than I'd ever seen before.

@@TheTravellingScientist I guess it depends on what kind of refrigerator you have and what you have stocked in there. Most people have a consumer grade fridge that over time degrades, but most people will keep for years until it dies. Putting hot foods into the fridge causes the interior refrigerator to become warmer making the refrigerator work harder to cool down keeping everything in it from going bad. I know someone who graduated with a culinary degree that also puts hot foods in a consumer refrigerator, however she can't figure out why her fruits, veggies, and other perishables goes bad so fast. @@utubestalker.dotcom yes exactly, that's what my query is! I have heard people say that if you put hot food in fridge it spoils the fridge's compressor or maybe some other hardware. My fridge is also pretty old, 9 years old. Please could you (or anybody who reads my comment) help me with my query?

The issue is the effect of the extra heat on the temperature inside the refrigerator, especially if the hot food takes a long time to cool. You could be subjecting the rest of the food in the fridge to higher than normal temperatures for a long time, allowing bacteria to grow there. I would like to see an actual experiment to prove or disprove this point.

How long is too long? If no other option than to letting it cool down, because other items must at all cost stay below 7*C, what is considered a safe time before putting it in the fridge?

I removed my cooked chicken from oven and forgot to put it in the refrigerator for 4 hours . the temp of the room was 17 Celsius . do you think I have to throw it away? Considering that boiling food takes time to get to room temperature

Hey @Ali Esmailiyan sorry that it took me 6 days to respond to this question, I hope that by now the chicken is gone. I probably wouldn't have thrown it away instantly after 4 hours, but wouldn't have kept it much longer than a day after. Hope that helps, Cheers for watching and commenting Legend!

Refrigerators in restaurants frequently break down, and consistently struggle to maintain the appropriate temps. A chef leaving a sauce isn't about necessarily leaving to grow bacteria at room temp, a lot of restaurants reuse containers from other things, that would melt if poured directly after cooking.

I'm in Florida. I camp in a small van some times. it has a small 12v fridge that can run 24x7 at 40F in my simple power setup. Mostly I refrigerate cause the van can get up to 100F inside during the middle of the day . But in our so-called winter, it can get down to 40F some nights. When I does , I have an electric blanket but don't have enough power to run the fridge and the blanket. I know veggies will be fine overnight at around 50F without a fridge, but how about cured ham and left over deep fried chicken with the skin? cheese? left over pizza?

i imagine putting a small pot of hot soup straight off the stove into your little refrigerator will end up spoiling everything that you have in it, and over work your fridge, which means more electricity to run it

Thanks for response. Its a tiny 15L fridge/freezer and rarely has meat. Also no milk, cheese or eggs. I keep about a weeks worth of salad, an onion, a green pepper, some chocolate, PB, mayo and powdered creamer. If I ever store left overs it will be some room temp pizza or Chinese I would be eating in the next 2 days. Any raw meat would be stored seasoned in garlic and consumed in 48 hours.

It is, as hot food will create a lingering smell in the fridge which can mess with more soft-structured ingredients like strawberries

What I do with cooked food is I take the freezer packs out of the freezer and i 1 under and on top and on the sides of my food. I then play a game of fortnite then the food is chilled... If I don't do that I water-cool the food,bowl in sink. If I don't do that I fan cool it ...this ain't a dusty factory and it ain't some passively cooled device.

Pretty sure your fridge would reek of whatever hot stuff you put in there, potentially ruining contrasting favoured ingredients. I don't think you want chicken flavored strawberries, unless that's your thing 💀. Also I haven't tested it myself, but on an episode of kitchen nightmares, Ramsey claims that putting hot tomato sauce will cause it to go sour. Some kitchens do have what's known as a "blast chiller", which is designed to cool down food much faster than a fridge, to then be moved to the main fridge as to save space from being taken up by foods which are cooling. It also filters out the smell through a vent, which i covered why is important already.
