Easy, delicious, unique condiment that almost goes with EVERYTHING! You should always have a jar of Pickled Red Onions in your fridge, ready for anything.
2 sliced Red onions
2 Cups filtered water
2 Cups Vinegar (you could use Apple Cider Vinegar, or any of your favorite)
1/3 Cup sugar
3 Tablespoons of salt
Pinch of crushed oregano (optional)
Slice onions and place in glass or ceramic jar. Heat the water, vinegar, sugar and salt on the stove just long enough so the sugar and salt dissolve. Add the oregano if you're using that (just a small pinch). Carefully, pour the liquid over the onions in the jar, secure the lid, give it a shake, and leave on your counter for a few hours before refrigerating. Enjoy on anything!
