The thing is, the owner hires the manager, the manager is supervising the whole effort and making sure everyone else is doing their job. The owner really doesnt need to be getting knee deep in the work like that, unless he is also the manager, its not his job. Thats just a general guideline but in general yeah, the owner might come in from time to time to make sure the reports he gets are accurate and that the manager is keeping everything together, but mostly its not what he is supposed to be doing. The owner should be in charge of finances, making sure they arent losing money on supplies, arent running out of food and not throwing out more than necessary, bills are being paid, so on and so forth. The cooks should be making the manager aware of what crap they are working with, the manager makes the call on what to do, ie, can they push it another day, throw it out, order new stuff, etc. Then he has to justify it to the owner who wants to know why 10k in steaks just got tossed into the trash and has to be replaced. That way changes to the ordering process can be made.

@@chrishubbard64 I don't even think the owner has to do what you mentioned, and it's even less. The single only thing the owner has to do is pay their bills. All the rest of it is the manager's job. He's supposed to manage the entire process for crying out loud. That includes budgeting supplies, making sure nothing goes to waste, reporting etc. The owner just pays the bills, salaries, and if he wants to - checks up to make sure his money is being spent well.

I've worked in several restaurants in my day. All of which used and enforced putting expiration stickers on everything. These restaurants shamelessly don't and I'm pretty sure any chef with a brain or at least with culinary education knows to date their food.

This reminds me of - back in the days - when I was a cleaning lady in a pub/restaurant (not the kitchen, I wasn't allowed in it at any given time). The owners went on a holiday for 3 weeks (they kept the place open on their own, no cooks what so ever, so the place was closed for 3 weeks) and a few days before they came back from holiday they gave me a call to clean up the kitchen. What I found there made me puke, for real guys. Used plates with mold everywhere, garbage not taken outside (and left open, so the flies had a real feast), (un)cooked food in pots, just standing there on the stove, everything greased up as it had never been cleaned since they opened the place, and so on. But the WORST part were the fridges and freezers. For some reason they had shut the entire electricity and ,of course, the fridges and freezers weren't empty. Have a guess how sick I felt when I opened those doors. Rotten meat and veggies and what not!! The smell was terrible, like something had died inthere (that's what rotten meat smells). Useless to say those machines were ready for the trash: you can NEVER ever get that smell out of there anymore. I made a call to the owners and told them what was going on, and the only thing they said was: yeah well, clean it up, that's what you're paid for. REALLY???? Soooo, the only sensible thing I could do was calling health and food inspection. Result: the restaurant got shut down for a term until everything was in order for food and health inspection, and I lost my job - no surpize there. But at least I can say that I took care of it and didn't allow to let them continue like they did.

Why are the standards of restaurants in America so shit ? In the UK, it would be illegal to have a kitchen like some of the ones you see on this show. Ive worked in a few kitchens and the hygiene, labelling and stock rotation is just common knowledge. Fridges are cleaned out twice a day, stock is constantly rotated and always use local fresh produce. Chef Ramsay is a good man. Almost had a chance to work for him but then i fell pregnant.

When I was in Dublin, I went with my colleagues to "Smyths of Ranelagh", an award-winning pub.
