Chef's Notes: 1. Do not use native or free roaming chicken. Use chicken broilers. I suggest you use big chickens. Try to buy chicken ham because it is a good size with at least 1.5 kilos per piece. Of course, regular sized chickens are fine too but the bigger chicken looks more impressive on the dinner table. 2. Be careful not to over cook the chicken. You want to be able to put the whole chicken on a platter with all the parts intact. You don't want any fall off the bone look for this recipe. 3. If the chicken is already cooked but the sauce has not thickened up yet, remove the chicken and boil the sauce until it thickens and then put back the chicken for a few minutes to get the nice glaze. 4. In the supermarket, they do not usually put the Big Bird on display, so try to ask the sales person if she has them. When I asked if they had a bigger sized chicken, the sales person told me if I was okay with the Big Bird. I told her that was what I was looking for!

@@cjespiritu7307 It needs a very long cooking time and the meat is not juicy because native chickens are usually lean.

thank you for this recipe...I have been trying to find chicken ham to buy because I no longer eat beef turkey or pork because of high uric acid levels & the pain it causes.....I have found chicken bacon but chicken ham has been elusive....hoping this tase kind of like the smoked turkey drumsticks or turkey ham

Cooked in the refrigerator for 3 days or 2 months in the freezer. Raw in the freezer not longer than 2 weeks because it will be too salty.

Yes, you can but be careful not to overcook because you must be able to slice the chicken ham nicely.

You can buy it online ma’am. In the Philippines it is marketed as praque powder. Outside of the Philippines, it is called curing salt.

You can use Vitamin C but only for color. It has no preservative quality so the meat will spoil when you cure it. If you cure meat, you need the praque powder.

This looks delicious, and I think this will work well with Turkey, only curing will take longer and probably double or triple the used ingredients here. I'm so curious to try :)

Use as a basis 1.5 kg and compute the rest of the ingredients. Ratio and proportion...work on your turkey if it weighs say 3 kg...then double the ingredients. May basis is on a 1kilo meat...then weight your chicken or turkey. Although I'm careful with my prague powder because as preservative it is carcinogenic. Per kilo of meat I use only 1/4 tsp. If your meat is 4 kg...then I use 1tbsp.prague powder. Happy cooking...

There is no substitute for cloves. You can omit if you don't have them. Yes, the chicken ham is served cold or chilled like your regular pork ham. Of course, you can serve the chicken ham warm too but it is best served chilled. By the way, please watch out for my refrigerator ham recipe on Nov 22 in my youtube channel.

Kung walang curing salt, hindi siya lasang hamon. You can buy curing salt online sa Shopee at Lazada. Mura lang yan. Kaunti lang kailanganin mo.

I have never sold chicken ham but my estimate would be around P650 - P700 for a 1.5 kg raw chicken weight. But it is best to make your own costing and do not forget the cost of your packaging as well. Thank you for watching!

Try orange or apple or mango juice. It will of course taste different from the usual hamonada but I think it will still taste good.

From a layman's point of view, you are correct BUT in food technology meats that has undergone processing methods like curing, smoking and drying is defined as a ham. Ham is mainly derived from pork but it can also be made from various meat sources like chicken and beef.
