That looks delicious however I am not having luck with this. I tried Lupin flour and no luck, today I did the CK mix with almond flour and made the bread that you show cased a few weeks ago. I cooked it in the pullman pan, it did rise to the top however the bread was an off color that could be due to the almond flour, it was very dense and didn't taste good at all. i don't know what i am doing wrong I measure twice and mix mix mix, ingredients are fresh but still no luck. But I am hoping that when I get the chicken flour blend it will be a winner!!! And you hubby's southern accent is spot on lol Take care and God bless

You Mel and Victoria (Keto flour) are sailing ahead of changing the way people can eat and get healthy. This is not just for the Keto community but for anyone with autoimmune disease wanting to eat cleaner. The one recipe needed now is to make a good pastry for lovely yummy pies and tortes etc. I’m guessing perhaps the pasta could double up as pastry perhaps, it’s just whether it would cut and hold with the ingredients of say for a cheese cake, torte or chicken pie incased. 😋 😊❤

@@CookwithMel1 the maltodextrin is broken down to power the bonding action of the enzyme! I was also concerned about this when I first heard of chef Wylie Defresne's shrimp noodles. You also only need up to 3% of the total protein weight.

If you want to flavor your pasta use oil infused with the herbs or spices of your choice. For example I used olive oil enfused with garlic and added that to my almond flour pasta, I did add xantham gum and dehydrated it turned out very flavorful

@@CookwithMel1 Two questions as I load up my amazon cart: 1) Does it do the lupin flour pasta thing? The only keto pasta I've had was lupin flour macaroni, I don't know if this is universal but when you chewed the macaroni they became an unpleasant coarse paste. 2) Is there any chance it works with chicken flour alone? Or at least without the bamboo fiber? It would be incredible to have a pasta-maker-friendly dough that is fully carnivore.

Hi mel!! if we wanna make flavoured pasta, like spinach, for example, we just replace the egg amount with spinachs?. On the other hand, i saw the banana bread video, and i want to ask you if i can use eggplant puree instead of the banana jam? same amount? thanks!! keep sharing these wonderful recipes ;)

Hi Cinthia. Any added ingredients like puree and spinach will be extra. Because there will be extra moisture from these ingredients you will probably need to add more flour so you will need to keep an eye on that 😉

@CookwithMel1 I don't have a kitchen aid or stand mixer, so will have to get a pasta machine. Not a lot of them have macaroni option, so might have to get a manual extruder.

What a wonderful idea and video! Thank you for all the tips and tricks. I’m so pleased you think about those of us who have health issues with baking and cooking. I found an article that says guar gum may have the same digestive issues as xanathan gum. So I’ll probably want to use xanthan gum because you might be more familiar with it and can help with the amount. I appreciate all the testing. So it sounds like I need to dehydrate the almond flour pasta. But how do I cook it if I just want spaghetti? What is storage of the dried pasta Chris, , you did a great job editing, and love the music

Thanks so much Judy. Yes it's best to dehydrate and then I like to store mine in the freezer because I make it in bulk. It keeps well in the pantry for up to 5 days though. Handy if you're going to use it within a week ❤️❤️❤️

The interesting thing about Keto in this style is that you need smaller portions to be satisfied because with wheat pasta with hybridized wheat you don't lose that full feeling until you have overeaten. The body doesn't recognize hybridized, and you never feel full.

Hello, and congrats for starting 👏 😀 Xanthan gum is a more potent form of gelatin, it's does solve a whole lot in gluten free keto baking. I'm not a fan of using it all the time because it doesn't promote healthy digestion. There are lots of alternatives though. Any more questions let me know. I don't mind at all 😊

You're welcome. I use the clean keto flour to thicken sauces and make gravy. You could also use gelatin, sprinkle then mix it in add more until you're happy with the consistency 😊 Xanthan gum is 3 times more potent than gelatin. If you want to replace the xanthan gum in recipes you can use gelatin x 3 😁

Love lasagna and OMG Mel, that looks divine! I wanted to dive through the screen to eat it hahaha. The pasta itself looks really good, just like the real deal. What sauce do you use to keep it low carb? My oven light only comes on once oven is turned on, would that matter or would that be too warm even with the oven set to very low heat if Im dehydrating? Haha, the pasta disappearing slowly off the bench 😆😆 LOL Chris, too funny mate. Love the accent ya got goin' on there LOL.

Thanks so much Michelle. Lol I would want to dive through the screen too. I use all kinds of sauces but with the flour being so carb you have more leg room. I used canned tomatoes instead of fresh, for white sauces I thicken the sauce with cream cheese...and keep the spices the same. That's exactly how your oven needs to be...switched on to the lowest heat so that the light is on. Can't turn my back for 5 minutes with him 🤣🤣🤣

@@CookwithMel1 Ah ok. I'll search for a low carb sauce but yes, I love that about the pasta being so low carb and being able to have a bit more carb in the sauce. That's so good! LOL You need eyes in the back of your head to watch him haha. Have you ever thought about getting into producing your recipes and selling them? A bit like The Great Low Carb Bread Co I mentioned in my chat with you. I'd pay to buy your pasta, breads and other goodies and not have to make them myself. Ive hardly got any room to work in my tiny kitchen so make baking hard. Imagine creating a store like The Great Low Carb Bread Co in Oz. I'd love to be able to fly to the US just for a shopping trip haha.

My heart has been broken by so many tries at keto pasta, but I am going to give this a try since I have the attachments to my kitchen aid. I also have a dehydrator. How long does the dehydrated pasta last?

To be honest I've been disappointed too until I learned to make it. We have quite a few recipes as a result. If you freeze it, it will be good for 6 months. If you store it in the pantry do use within a week. I really hope you enjoy it 😊😊😊

If i want to make macaroni like you did in the video, i'm supposed to let the dough dry on the counter after I cut it in macaroni shapes or before? And if it's before, am I supposed to flatten the dough or just leave it as a dough ball?

I did the ck almond version today in a pasta machine and it worked well. I’m just waiting for it to dry before I can taste it but otherwise the process worked fine

Mel explained in another video that it gave her (and others) tummy trouble and wants to try using it a little as possible. I think that my family may have been suffering from the same, as I thickened a soup with it last night...😳.
