I found this recipe on his website. Mind you, there is no mention of the granulated sugar so this might be slightly different. This will at least give a reference point as to the amounts. Ingredients: 4 sweet red apples, peeled, cored, and thinly sliced; 2/3 cup sugar; 2 to 3 teaspoons fresh lemon juice; Ground nutmeg; Ground cinnamon; 1 cup all-purpose flour; 1 stick (1/4 pound ) unsalted butter, softened; 1/2 cup firmly packed brown sugar

I just tried this and it turned out great. Very very good with ice cream. I used only raw sugar for both apples and topping. Turbinado brown sugar.

@@bdlc592 sounds like the butter was not cold enough. You want to cut it so it will leave small rounded balls of butter coated with the sugar and flour and leaves more of a crumble. Also do not use your hands to mix, the warmth of your fingers will melt the butter.

I just made a sample of this in the stone wave, I have to say Emeril is the man. I love his version better cause is so simple to prepare and simply delicious, and no oats. I was looking for a no brainer apple crisp recipe and this is it. I will be making more apple crisp following this recipe.

This is the oldest Apple Crisp recipe, Ive found. Mine came from Germany via my mother-in-law. It was her grandmother's. That would have been 300-500 years ago. Even baked before ovens were common. It was cooked in an iron skillit with the lid on for a few minutes to cook the apples then lid came off. Then the top would carmelize and sugar would crisp.

I use oats and Graham crackers instead of flour, the crackers also allow you to cut back on the sugar and give it a real crisp, and organic cinnamon of course....

So good and so simple, but where Emeril said if you want more cinnamon ( he didn't need to say any more as I would have been adding it already) and I love cinnamon and don't think you can get to much. Yes I would have added it. God my mom could make some incredible apple crisp!

Why do some use room temp butter or other like here, suggest cold butter? I am wondering if it cold be that some may not want to wait for butter to soften or that some will leave out too long and get sick or something?? I always have butter on the counter to soften. I cook so much and like to not mess with cold butter-and haven't got sick yet. But, I'm wondering now if there is a difference in taste?? I don't like messing with the pastry cutter...but if Emeril likes it, well perhaps I should give it a try?

June 21, 2018: As always, it looks delicious. My aunts taught me the art of pie baking, and apple was my favorite. I made a rhubarb pie from fresh fruit that grew in my neighbor's yard while living in Enfield, Connecticut. My husband Tim and our neighbors didn't seem to mind the bitter taste--the extra sugar softened the tartness. I never considered using a cast iron skillet...great idea Emeril! Kate

Just by looking at the video one should be able to make this without a recipe....it's really not a big deal. Doesn't have to be excacly the same and it will be tasty anyways. Approximately 5 or 6 apples, 1 tbs cornstarch, lemon juice, 3 tsp cinnamon, pinch nutmeg, 1/2 c sugar. Topping 3/4 to a cup flour, pinch salt, 1/4 c sugar, 1 stick or 113 g COLD! butter. I added some walnuts also but pecan is nice too.
