A treasured memory is from my 16th birthday. At 8 pm that night, a knock on our back door was "Uncle" Alan (man from our church). He brought me an Italian cream cake made by his wife, "Aunt" Nora. They were an older couple with 2 grown kids but they were the angels of the church. Everyone adored them and when she died at 72, the whole congregation wept because we lost the sweetest person we ever knew. This cake reminds me of her.

I also make it from scratch. Mine has a layer of chocolate pastry cream and a layer of vanilla pastry cream , with peanuts on the outside and rum flavored cake. Very labor intensive but so worth it!

I have a Kitchen Aid but it drive me crazy trying to scrape the bottom of the bowl constantly to get everything mixed right! This mixer is less expensive, bigger, stronger motor (800 watts!)and so easy to add ingredients to!

This is one of my favorite cakes and you make it look easy. There's probably no difference in using cake flour and using the cake mix. It's still homemade all the way, with the infredients you added. I wish I had a piece right now!

Ok, this was absolutely, hands down, the best cake ever! I too have fibro and am flaring right now. So, I baked the cake the day before my B-Day, froze the layers and frosted the next day because basically, I'm exhausted. But seriously, this was one of the best cakes I have ever made. I have fibromyalgia too, when I was taking Lyrica my foot froze up and wouldn’t flex so I couldn’t drive! I can’t remember what other side effects I had it been quite a few years ago now

I have rods in 94% of my back so, I can only stand a few minutes at a time but, I LOVE to cook so, she is so right, do things in stages! I decorate cookies now since I can sit & work. I make dough one day, bake the next & start icing them that evening! I’d go crazy if I couldn’t create things!😂

Ladies please take Vitamin D3 oil based because it is a fat soluble vitamin. I take 10,000 units per day because I take Protonics and It affects how you absorb vitamins, I’ve been tested and I’m now normal.

I make my white cake mix 18.25 oz again by adding 3 oz of Krusteaz Pancake mix and an ice cream scoop of sour cream. It does Not have that fake pancake mix taste. Works like a charm and nobody knows it's in there. Watching your videos is like being in the kitchen with my own mom. She was a lovely, southern lady herself. Miss her like everything.

@@charlottehenderson1927 A decade ago I didn't know how to bake, so cake mixes were what I could make sucessfully. about 8 years ago I decided to take baking courses online through a culinary school. Best thing I ever did for myself. It's nice to know I don't have to buy or use those anymore.

There is a formula for increasing the box cake mixes to full volume. 1 1/2 Cup flour; 1 Cup sugar; 2 teaspoons baking power; 1/4 teaspoon baking soda. Mix with a whisk. ADD: 6 Tablespoons of this mixture to a yellow or white box cake mix. For a chocolate cake mix, substitute 25% of the flour with cocoa. I found this information on line. I keep this on hand all the time.

Made this cake for a birthday celebration. I had been watching the video and finally decide to go ahead with it. It came out beautifully! I even did the piping (for the first time) on the top. I would add 2 tsp vanilla extract to the cake mix and 1tsp vanilla to the frosting next time. It is an impressive looking and delicious cake. Thanks Tammy!

Tammy I too have Fibromyalgia. I wouldn't wish it on my worse enemy...if I had one. I do the same as you, go as far as I can and finish the next day. I love to bake and now that I am retired being a home bakers would be very enjoyable to me, only thing is since fibro is so unpredictable I how can one plan to get things done in a timely manner. My mind says "go, go, go", while my body says, nope, not today! Thanks for your recipes, holiday baking for the family gives me pride with their joy.
