Thank trying so hard to eat healthy but some of these ingredients are not available to people who are unemployed to be able to make this salad, the leaves are are available because I plant kale my family eat it as a stew, you just add oil and onion available in my garden, cook until soft add potatoes and eat with maize porridge for dinner. That’s how it goes in some poor African people in SA 🇿🇦❤️

There’s evidence that raw kale can affect thyroid function and digestion. People shouldn’t just jump on a fad because someone says so. In areas where people live long and healthy, they cook their food and they are also not vegans. Yes they have salads but something like kale will be cooked. And it’s not just food that determines your health; lifestyle, stress, loneliness etc are also contributors to one’s health.

In case you are referring to the "goitrogenic foods" That's pretty much debunked but a good amount of people have trouble digesting raw cruciferous vegetables especially kale and should simply cook it

​@@pandapanda246I'm one of those people. I love the way most cruciferous vegetables taste, but if I eat them too often, they'll cause me to have terrible intestinal cramping and constipation. Cooking them helps, but only so much. I think it is because I spent many years eating a lot of them every day and it probably messed up my gut over time.

It depends on your individiual digestion strength. If u don’t digest massaged kale salad, just prepare it differently. Also, change up your greens! Many other greens families! Dandelion, nettles, milk thistle, sorrel, beet & carrot tops 🥕👩🏼‍🌾

When I was pregnant my iron got a little low, I just started adding in kale and spinach at every meal, among other green vegetables. A few months later they tested it again and it had gone up 5 points! I never knew it would be that drastic! I was amazed.

@@mountaingirl1797 I actually toast them in a dry skillet just until the skin starts to darken. But you have to watch it because there is a fine line between darkened skin and burnt nut meat. Then after they are toasted, put them between 2 paper towels and rub them until all the bitter skin is removed. Perfect!

Portuguese Kale Soup (going back to the old country passed down for generations): Boil water in large Dutch oven on high. Add 1and a half to 2 minced yellow or white onions. Add I small package thinly sliced mild or hot (I prefer mild) chourice (Portuguese sausage. Ask your butcher or meat department if they have any ethnic sausages to substitute if you can't find it. Chourice is a bright red color because it contains a lot of spices that are crucial to the flavor of the broth, mainly paprika, so you could try using spicy sausage and adding some regular or smoked paprika to the broth to make up for not finding chourice. Experiment with dry seasonings and spices to get the right flavor. DO NOT use hot sauce in this soup. You will ruin it. ) Continue boiling on high while you prepare the vegetables. After about 30 minutes, turn down heat to medium high and add 2med to large/3 small carrots sliced medium to thin thickness (I prefer thinner) and 2 med to large/3 small potatoes cut in small to medium cubes (I prefer smaller so some dissolves into broth). Add a few shakes kosher salt, a couple Tablespoons olive oil and a few Knorr chicken bouillon cubes (start with less for thinner soup then add more according to preference) and boil about 30-45 minutes. Add 1 loose bunch or 1 small bag chopped kale ( do not remove stems) and boil another 45-60 minutes. You want the kale soft, but be careful not to overdissolve the vegetables. Thats why it's better to cut the potatoes and carrots a little thicker the first couple times you make it until you get better at it). Turn off heat and add 1 can rinsed drained red kidney beans. Be sure to keep adding water to top of pot throughout. If you cut the potatoes larger, remove a few and mash them up then return to pot to thicken and make the most incredible tasting broth you've ever had. Trust me! Eat with some nice fresh Portuguese popsecos (rolls) from the neighborhood bakery and enjoy. Best soup you'll ever have in your life. Takes a couple hours to make so you have to be patient, but it's worth it.

I make a kale soup very similar to your recipe, the main differences being I dont use kidney beans, I add heavy cream, and I use Italian sausage. Also I prefer the carrots to be shredded, and Ive made it both with and without tomatoes. Such a delicious, hearty soup!😊

@@freyjablue. This one has been around for hundreds of years. It's definitely something you want to try at some point and try to pass on to other people to enjoy. I edited the part about the Chourice with some suggestions for substitutions since I get that this is not something that is sold in most supermarkets beyond my neck of the woods. (I'm in New England right by the water where there are tons of Portuguese and Cape Verdean people and a growing number of Hispanics also, and these cultures all maintain their traditional ways of cooking. So there are tons of ethnic products sold at every supermarket.) Chourice is bright red because it has lots of seasonings and spices, mainly paprika , so I recommend adding that to the soup to make up for it if you can't find chourice or something ethnic that is similar. Use dry seasonings and spices though, not hot sauce because it will ruin the soup.

It’s so trendy to be vegan but I am quite sure in about 10 years time we should have data to check for the effects of veganism on health. I’m not convinced at all that they are healthier because there’s no research to back it up. Steve Jobs was vegan and he had cancer. I have seen people live long, healthy and who eat meat. We are more than what we eat( lifestyle, stress, happiness, loneliness etc contribute as well to our health. I’ve know vegans who had to introduce fish into their diet because of certain deficiencies. I just think people in the west like fads as it makes them feel good.

I don’t know her age but she looks like a woman in her late 40s. She even looks peri menopausal. If she is in that age bracket then she looks her age. I think people confuse being slim with being youthful. We don’t have enough research yet to ascertain that eating veggies prolongs life and gives good health. All the people touting benefits have not been doing it long enough for us to derive appropriate conclusions. Let’s see if they would have been able to avoid HBP, Diabetes etc in around 20 years time. Reminds of Steve jobs who ate foods like this and still had cancer.

Best to Blanche veggies.. body breaks it down & process it better. Our body aren't made to process raw vegetables fibers well unless you're likely chewing, masticate it for a long time like cows chews grass.. and tbh most of us rush in eating, shove foods down in minutes as work lunch breaks is like 30 minutes or so.

That isn’t entirely true. Regarding antioxidants in kale, cooking increases beta carotene (pro vitamin a) availability. However it significantly reduces the vitamin c and lutein/zeaxanthin content. Kale is far more powerful of an antioxidant rich food when raw and paired with an unsaturated fat such as olive oil or avocado. It has such a high beta carotene content that you will still get a good amount with raw kale and especially when paired with fat. Not to mention the amount of beta carotene you can absorb and process into vitamin a per day is limited. Lutein/Xeazanthin are not pro vitamin a carotenoids and therefore are not limited. Neither is dietary vitamin c. So raw is best if you want antioxidants!!

2 egg whites have approximately 8g of protein, whereas 2 tbsp of hemp hearts have about 6.67g of protein. Close, but they're not equivalent.

Try letting it sit over night with the lemon juice. It helps break it down.

According to Prevention Magazine published Feb 7th. 2022 a study found steamed kale can lower cholesterol and decrease the risk for cardiovascular disease and cancer. So you can try this method. This is the method I use almost everyday and I love it. It doesn’t even require any dressing when you’re eating it with your protein. Hope you love it !!

Yes! This is how I prepare my kale salads. Massaging with olive oil and lemon juice makes it so much easier to chew and digest and it’s so good! And thanks for the info. I didn’t know it also boosted the nutrients :) ❤ will try this recipe soon!

Kale, green apple, nuts like almonds or walnut or pecans, we use white wine vinegar and evoo, but lemon if we had it on hand would be tasty.

Kale looks so green, healthy, and delicious, but I can’t eat it because it gives me gas, as does cabbage also. They are in the cruciferous vegetable family. Anybody have any suggestions how to cook it so it does not give me gas? Maybe add a little baking soda to it when I cook it? I cannot eat it raw in salads and smoothies. Spinach is my go to green-leafy vegie. 😊

This looks delicious but be careful eating raw kale every day because it can cause thyroid issues. Mix it up by cooking it sometimes or better yet seasonally diet rotate.

Spinach has lots of oxalates. Watch Sally Norton's video. It will scare you. Your body can only handle 6 spinach leaves a day.

It is best to Blanche it to get rid of oxalate sand add some cheese maybe. Having said that, spinach does have higher oxalate than kale though. And yes for those with thyroid problems, it is best to avoid any cruciferous vegetables

I sure hope you chop those stems, and add them to the salad! I try to toss them with the acid/oil first, to help them begin to breakdown, while I prepare the rest of the leaves. Plus, they add some crunch to the salad!

I will have to try this as my iron is low! I have a question about iron absorption that I’m hoping you can answer as there are some mixed findings about iron and green tea. Do you know if drinking green tea immediately before and/or after a meal inhibits the body’s ability to absorb iron? Thank you in advance!
