Such a joy to watch. A few observations: 1. Impeccably clean kitchen/equipment, tells you how to identify a fresh fish, BTW the proper way to clean a fish is with LOTS of water 2. Chef is using a deba knife,best for filleting fish,and he is wiping it to prevent rusting 3. Calm demeanor, no yelling/slamming/clanging, no weird showing off 4. Detailed and easy to follow explanation 5. Lovely voice Why this this guy not have more followers? Please make more videos!

nice instructional video, bud. and a nice fish. haven't tried it (not a common find in the USA) but the meat on those filets looks like it'd be delicious! and to those reading the comments the trick with the skewers is a nice touch, but not essential. I use my finger to clean that part out. and the back of my fingernail ( note I said the back.. don't want to scrape at it and get it under my fingernail) but I'm sure it makes it easier.

I really like the handle on these knives as they feel good in my hand. I'm giving them 4 stars on look and feel, but have not had the chance to put them to the test yet. I mostly fish for catfish and can hopefully try them out in the next few days. If they hold an edge throughout a limit of catfish, they'll be worth another star.Update...I used the 9" strong and the 9" fillet on a mess of catfish. I did put a sharpening on these before I started. I want a razor edge to fillet fish but they weren't quite that sharp. The people who gave these knives crappy reviews and said they were sending them back was because they weren't razor sharp. So what, do they not have a knife sharpener?? Good grief! I mean you have to sharpen any knife from time to time.I personally like them and am pleased with them. If you're too lazy to sharpen a knife then hire someone to clean your fish lol.I've never bought a knife in my life that would shave hair right out of the box. Don't be afraid to purchase the knives. They're pretty nice in my opinion.

The head was chopped off, belly sliced, guts pulled out, and blood almost everywhere. Unlike people whose lives haven't been harden by lifetime of B horror movies, some find this rather disturbing. Quit applying your standards onto others, for the world doesn't revolve around you.

Great technique, I catch these all the time here in East Coast Australia : these fillets Off say an 800 gram specimen , dusted in cornflour and fried3-4 minutes a side in hot sunflower oil , served with a crisp green salad and boiled new potatoes - served with a lemon wedge or two and a cold lager ..... BLISS

It's funny how meat eaters like make fun of butthurt vegans, and yet here's a whole comment section full of meat eaters whining about the word 'graphic' in the title. Aside from the awful comment section, good video. I normally fillet larger (cheaper) fish so I found removing the head to be strange. My western style fillet knife would probably snap before if cut through the spine, so maybe I need to upgrade my knife sometime soon.

Not sure on the brand, but it's a Deba style knife. A Japanese knife that's suited best for cutting fish and other meats. It's thicker and sturdier than the typical chefs knifes so it can cut through the fish bones and scrape along the spine. Wouldn't want to try that with a standard chefs knife. 👍

Your instructions are very clear. Thanks for mentioning making stock from the head and the bones. Yours is the only filleting video I've seen to speak of stock from what other toss in the bin.
