Crisp Onion Bhaji Recipe: You could also call this a crispy onion fritters recipe. A popular street flood that's crisp and delicious, these onion bhaji or kanda bhaji would make a great starter too. They are also a monsoon delight. That's why, whenever we, here in Maharashtra especially, think of the monsoons, we always think of hot, crunchy onion bhaji. When it's pouring outside, how we love to munch on these crispy fritters along with our cup of chai, right? But now, let me show you how easy it is to make these at home, that too with ingredients you most probably already have in your kitchen.

And no, there's no need to add any soda, as we don't want these bhajiyas to puff up and become spongy. We want them to be crisp. But yes, you could add chopped coriander leaves to add a different flavour and look to them.

Great not just for Indian monsoons....but for NZ winters too...quick question...how do you keep these crisp if made ahead? And how long do they stay crisp? Thanks for sharing this recipe.

You're most welcome, Susanne. And you're absolutely right about enjoying hot and delicious bhajis in the winter time. The bhajis will stay crisp for around 3-4 hours when stored in an airtight container. In the winter in NZ, maybe for longer than that.

However I am happy to improve my cooking techniques after listening to you and learning more from your tips. For Christmas I plan on preparing the Milk Toffee as shared by you.
