➼ Easy Vegan Brioche Recipe, A vegetable brioche recipe at home.
• T45 flour: 465g
• Cornstarch: 45g
• Salt: 7g
• Sugar: 70g
• Fresh yeast 20g
• Water: 250g
• Milk: 300g
• Margarine (vegan golden fruit 79% mg): 140g
• Kneading: 4min in 1st speed + 7min in 2nd speed
+ 4min with margarine
• Pointing 30 min at room temperature make a flap
and place 3h minimum 4°c.
• Division
• Formatting
• Shaping
• Primer: approximately 2 hours at 27°
• for the glaze: 50g almond milk + 50g sugar
• Add grain sugar
• Cooking: 15 to 30 min at 150°C depending on the weight.
• Penetrant testing on grid
