The difference between speculaas and speculoos cookies is that the Dutch version is made with a specific blend of spices, whereas speculoos gets its flavour by caramelizing sugar. This is because the Dutch could import a lot of spices from their colonies, but the Belgians couldn't. Those spices were way too expensive for them, so they created their own version with much less of them. Just something you might be interested in :)

they are competing with the locally made versions... it's impossible :p . those noses are way better fresh, just like the waffles. (and I must agree, a waffle from brussels is much better, but kind of like comparing apples with oranges, it's different. the brussels one is not sweet from itself and is mostly eaten with wipped cream or chocolate or actually both, but the one from liege is also often eaten with chocolate... just because we can, i guess) there are all kinds of speculoos. And then there weren't even any chocolate pralines in the package, which is something belgium is famous for (just like the beer... but sending beer would be difficult, allthough the fruitbeers are a great liquid snack ;) and something invented here). Neuhaus still exists and has some ridiculously expensive pralines. (that's why leonidas is more popular with tourists as they are more affordable, but neuhaus is offcourse a lot better.) and that's only the snacks offcourse. our food is equally scrumptious and mostly decadent I guess. french quality with german quantity :p . still... i don't feel like i'm the best person to send some more decadent things from belgium, as I'm a vegan and for many things i'll have to work from memory of 17 years ago. to say you'll just have to visit is a bit of a bummer, as there are so many amazing country's, it's nearly impossible to visit them all just to taste all the different amazing snacks and foods. It's just an amazing concept to have them sent to somebody like emmy, who can share her experience so lovely :) .

Sad fact about both Belgian waffles: you need special, heavy, cast iron waffle irons to make them well. The Brussels one turns into a sad, hard pancake in a normal iron because the batter is so runny. The Liegeois one can theoretically be made in a normal if you get an iron that can close around the thick, yeasted dough and its sugar crystals, but you'll struggle to cook it all the way without burning the outside.

Decent waffle irons go for around 100€ and the individual pair of plates 30-60€ depending on the machine. Each type of waffle has a different mold of plates. All waffle irons close from both sides over here. Burning is always an option, that's why we expect the first waffle/pancake to fail so the next one can be timed according to the first one. No batter will be identical each and every time.

Brussel Wafles are supposed to be crisp. These are made with an entirely different batter. This the kind of dough that you mold, by hand, in to balls before putting it on the iron cast. An iron cast with wider squares us needed for these.

My 2nd grade teacher went to Belgium and she brought back some beautiful textiles and showed us a way to weave and make textiles like them. One thing I really remember is she said a old women who lived on a hill taught them how to make soap from animal fat! Ive always wanted to try it :) maybe you could make some soap? Great video!

Oh, yes. I've always been fascinated by saponification, but got a little stumped with finding a local source of lye. At one time you could use a brand of drain cleaner, but I haven't had any luck finding it. In the Netherlands it's actually quite a popular snack (at least when I was a kid) to eat the windmill cookie kind of speculaas on white bread. It's delicious and we even have a sprinkle product called "Schuddebuikjes" (shakey bellies) which are small pieces of speculaas cookies!

When I was really little my dad used to travel aboard a lot with his job. He would bring back new and different food for us to try and one of my very favourite things was thin snappy chocolate sheets to have on a sandwich. I loved that so much!! I am a Chinese born in Belgium! So eating is in my genes and my upbringing! The treats you sent are exactly that: a BIT of the culture. And really just a BIT, Emmy. You really really HAVE to make your way to Belgium. In every province and city there are specialised treats and foods of that region. Even the carnavals (here they are called "kermis"or "foor", last one is pronounced "fohr" with the "oo" like the "oh" in "oh dear") have special "dishes"... I love love love the eating cultures!!

Yes, they are one in the same. The airline that introduced them to me was Delta. This was many years ago and of course after tasting how good they are, it was my mission to try and find them somewhere so I could buy them. It's a lot easier to find them now, I've seen them in stores in my area.

They're served freshly cooked and the big sugar beads caramelized so they it give to you with a paper around it so you can hold it (very sticky with caramel).

I’m Belgian, the one thing i am most proud of is our Belgian chocolate. Few years ago i send some to cathy culp on youtube... too bad they melted a bit on the way! I eat Speculoos- spread very often. You can eat in on bread, but also as a cupcake spead, on ice cream... glad you liked pretty much everything!

It's a shame you can't eat 'French' fries in Belgium. It is an entirely different experience than what passes for fries everywhere else. They are boiled in beef fat. That's why we don't get them anywhere else. But it's a total revelation! Thanks for eating for us.

They are baked at different temperatures, that's why we bake them twice.

Hi, first of all! French fries don't exist :). The reason they are called "French" is because in WW1 the american soldiers taught they were in France when they ate them for the first time. Originaly they were little fish baked in oil around Liege, but with the introduction of patatoes in Europe and a shortage of fish they started to use patatoes. You want Fries as good as in Belgium? Then follow the next steps ;) 1) Peel patatoes and cut them into fries 2) Rinse them good in water 3)Dry them 4) Bake them in oil on 160° C until most of the steam is gone . In this stage You can easily put them in a plastic bag and freeze them for later use when you have to much of them to serve. 5) Bake them in oil of 180°C until they start to what we call "sing" takes about 2-3 minutes. 6) Bake them a few seconds in oil from 190°C but if you're frier can do 200-220°C you should fry them on the hottest,till they are golden yellow 7) Poor them out in a bowl and shake them good and serve them as fast as you can hahahaha. O btw don't salt them when you shake them but let the people on the table decide if they need salt on them. Bout the beef fat you were right but nowadays most people use special plantoils in Belgium that ressist's heat very well and is better for the health. Smakelijk !

Never ever use olive oil to fry fries !!!!! They give an awful taste! There are plenty of special fry-oils that are made from mixed vegetable oils. Also much done in Belgium is to fry them the first time in beeffat for the taste and the last time in vegetable oil. That way of frying them is used in the best *** restaurant in Belgium ;)

So hungry now, but we only have frangipanes and Zebra cakes left :( Would love some of that speculoos, to dip in coffee, and spread it out on a slice of fresh white bread. You can make the Brussels wafels at home too :D But you should come to Belgium to try all of the great chocolates and candies. Tip: google Brusselse met slagroom

There are speculoos cookies with almonds in them over here made by the Jules Destrooper company in deepest West-Flanders. No way a person from Ghent is going to send you any of them. Province based rivalries are real in Flanders and the East vs West Flanders situation is particularly bad, although they both tend to gang up on Antwerp, where I live. Note: this is all in good fun. To foreigners, Flanders can seem like a harsh place... it's not, it's just ribbing friends savagely is part of what we perceive of as humour.

My Food Trek For Sweden, I suggest you try doing a regional desert, like the Cheese cake of Småland, it's completely different from the US cheese cake concept, made from unhomogenized milk, cream, eggs, almonds, bitter almonds, some other ingredients I don't know by heart, baked in an oven in a tall sided metal pan, and served starting with scooping up the servings from the center of the cake for the most important guests and the hosts with whipped cream and strawberry jam. The custom of starting at the center comes from the risk of copper poisoning if the tin liner of the copper pan had any damage. Once steel and other metals took over in the kitchen, that practice of course lost it's practical purpose.

The lotus cookies are a big thing here in Switzerland you can find it even in small stores, love them soo much. And I do love the language in belgian too,I can almost read it without learnd it(well,on foods only)or even put words like a puzzle together because some are quite similar to swissgerman, and it is so much fun to read the description and guess what it is,such a wonderful sounding language^^

the thin chocolate bar things would probably be delicious if it's put on toast right out of the toaster so the chocolate melts. I love watching these videos even if it's a bit bittersweet. I would love to be able to try all the stuff in these videos but I have so many food allergies I'll never be able to try them. Thank you Emmy for such lovely descriptions and taking time to make these videos.

You know what I really liked about this video? It may be weird, but I loved the fact that you dident butcher our language! Dutch is a hard language and your pronunciation was pretty good! Good to see you enjoyed our local products! As a Dutch/Belgian hybrid it's always fun to see how people react to our food
