I've actually seen the opposite advice, which is to add in an extra egg and also replace the oil with butter and water with milk. Makes for a much richer and dense cake. The trouble with the eggless cake is that it doesn't keep its shape and will fall apart when you try to move it and put icing on it, and you DEFINITELY wouldn't be able to stack it.

Their not useless, cake has always served as a major part of the privileged society. And therefore, the look of it is at many times as important or at times even more important that the taste (things like weddings, high class parties, etc.). Eggs are used as structural security, so it makes sense why they implemeted it to the ingrediants. Edit: its just not completely neccessary.

Yes, xanthan gum is a substitute, but like he pointed out, if you want a professional cake that is more rich, creamy, and dense, just that one egg can make a huge difference. It's like taking that one 16th tablespoon of salt out of buttercream. Without it, it's much sweeter and tastes off.

My fave lazy mufffin/cake recipe already just needs 2 ingredients (gingerbread cake boxed mix and pumpkin puree - not pie filling but pure puree). Makes quite a few moist and slightly dense "muffins", and is even better when you add some pumpkin spices. Definitely worth a try and fun for fall.

When I went to a local summer camp, one of the counselors told me that companies added the egg stipulation (both for cakes and for bread I believe) was because mothers in the 50’s would feel better about serving their kids something that had eggs in it, leading to higher sales of both eggs and mix. The conclusion given in the article sounds better, but that’s what I’ve heard Edit: presumably because they viewed eggs as a healthier product and adding it made it healthier (I dunno)

It wasn't moms it was stay at home wives/housewives. I watched a documentary about it but not all of them were mothers...or at least before they were obligatory mothers they had to be full time maid-cooks for their husbands. This applied equally to a 19 year old wife as to a 38 year old SAHM so it's not really a mom thing...they said "I'd be a bad wife/host" at that time being a good wife to your husband was more important than even being a good parent. Coddling kids was seen as very bad. (But not coddling husbands) so yeah this was fully a wife thing.

I remember hearing that they added extra steps to boxed cooking/baking mixes so people still had the satisfaction of putting in the effort to make it while still taking away the hassle. I guess they sold better that way when boxed food mixes were started. Could be a myth, but that could be why people thought this. (Edit) Just got to the end of the video, I guess it wasn't a rumor haha. Also, I don't think it was a sexist thing, I think it really was just an everybody psychology thing.

Yeah. This is a video that I think is stupid. the eggs being added in the cakes make it more rich and helps hold the cake together. That's why you need eggs in a cake when you for some reason dont have chemicals to add in your cake. They want your cake to come out the best it could be. If you want a garbage cake that you can't stack, is less dense, and less airy and tasty, you can have it. I prefer having the best outcome that's not garbage.

@@AHamadaHamido The egg requirement can be easily bypassed by adding more chemicals (as matpat said aswell). The recipes today are probably modified to accomodate use of eggs and oil, so yes, today you need eggs to make it perfect, but it's by no means necessary if the companies wanted to.

People stack boxes cakes?? If you want a perfect cake and are stacking them, why you buying a box mix? You make it from a recipe not a box. Boxed things are meant to be convenient. The more you have to add to it the less convenient it is. And chemicals aren't supposed to have been added by the consumer-the poster was saying that companies could add the same chemicals they have in their mix (prior to consumer purchase) to make it so you just need water. Not that you as the consumer would add more chemicals.

You absolutely need eggs or something similar when working with gluten free flours. In fact there's a lot of interesting science regarding the differences with gluten free cooking and why you sometimes need to do the opposite of what you would do when cooking with gluten/wheat. Gluten free flours typically have a much higher starch to protein ratio than wheat flour or rye, for example, and so eggs not only act as an emulsifer, but add needed extra protein into the mix to account for that difference in the flours themselves.
