@@SweetDumpling I'm going to try again tomorrow. I made a few mistakes. I didn't have any citrus on hand, so I used the same ratio of lemon juice. The cake tasted really, really good and I added powdered ginger to the batter, but it was quite dense in the middle because my liquid ratio was off when I doubled the recipe. Also, I didn't have any cake flour. Stores in Miami are still observing pandemic hours, so I couldn't go get any at 1am. After I master this, I'll move onto your marble cake. Hello there, I haven't used Swerve myself, so I'm not entirely sure about the results. However, Swerve is a common sugar substitute that usually mimics the sweetness and texture of sugar. If you decide to try it, there might be some minor differences in taste and texture, but overall it should still make a delicious pound cake. Hi Litto, 藍帶的食譜是用跟我們一樣大小的烤模,但一次烤3條,等於是我們食譜的3倍量材料,他們用180C烤了30分鐘。 你的麵糊量也是3倍多,也許可以參考它們的烤溫,但烘烤時間因為是單獨一個大烤模,可能會烤的再久一點,但這都只是參考,因為家用烤箱每台烤溫和熱效能表現都不同,食譜的烤溫都只能當作初次嚐試的依據,然後再重新調整,像我們家的用180c烤就偏高溫,所以第二次烤時降為170c表現就比較好。因此不二法門就是顧爐,在10-15分鐘時看一下它有沒有膨脹起來以及上色的情況,然後烤到快25~30分鐘時,看它的上色情況,顏色不到都不要急著出爐,看著差不多時,拿竹籤插一下若不沾就熟了。😊
