It's actually a reaction that occurs because of the acids in the citrus and it breaks down the meat which can do several things including making it more porous and able to absorb spices or salt or oil and also making it more tender. You can overdo it too so for newbies you should look into it first

When I use canned vegetables I save a can or two, then when I have grease to get rid of I can pour it off into cans to set aside to harden up,then they can be tossed into the garbage instead of down the drain where it will harden and cause a clog.

OMG you are priceless! Love country cooking, grew up with it. I so wish we could eat this dinner! Wow! By the way, my grandmother was the best cook in town. She won ribbons all the time at the county fair. That said, I have her recipe books, but guess what, she never wrote anything down, her best dishes were from scratch. For Halloween? Homemade candy and popcorn balls, OMG! Love her so much, and miss her, understand completely your sentiments.

Try double dipping your cube steak with the second dip being crumbled saltines. If the cube steak was too thick to start with, use the edge of a plate to thoroughly pound it out to about double in size. Very tender and goes further.

I dunno, in Wyoming, the school served us "country fried steak" at least once a month and it was always a pork chop beat to death, and fried till a bit rubbery, or maybe that was from sitting on a steam table. I'm not advocating Converse county School District #2's cooking skills,(they had some good stuff, and some good cooks but I think institutionally speaking it didn't work well) but I didn't actually know people fried actual beef steaks, till today.
