I cooked your okonomiyaki for my boyfriend as a birthday present. He lived in Japan for 7 years and has not really found anything on the east coast that taste like it. He had no doubt it was going to taste good but he was worried it wasn’t gonna taste like the ones he had in Japan. And when I made it he said it was spot on. I gotta check if they sell nagaimo at my local Asian supermarket! I recently made okonomiyaki following a recipe from a Dutch website and it didn’t include nagaimo, I also didn’t have pickled red ginger and bonito flakes at home, I can’t wait to try it again with these ingredients! 🤩

I've been using this recipe a lot, recently instead of cabbage I added small shrimps and chopped shiitake mushrooms. No tempura or ginger though. And udon noodles on the frying pan just before the everything else. I recommend to try it out, at least once, very tasty! And I've eaten okonomiyaki in Ajinoya and Mizuno in Osaka and Okonomimura in Hiroshima, so let me tell you, it is amazing how similar the taste is. Thank you for recipe❤

Thank you!! I cook Okonomiyaki all the time, because it's quick and easy and tasty, but my recipe is not very authentic. This will definitely help me improve my Okonomiyaki, and I'm sure the main problem is the baking powder and yam are missing (my batter turns out dense). I might have to try it tomorrow for dinner!

I tried this the other day, but I substituted baking powder for the nagaimo (having trouble finding it). It requires extra liquid when you do this, otherwise the batter is too dry. On top of that, you lose a lot of mass. I'll try to use taro instead next time if I can't find it.

Can you freeze the Nagaimo that is left over? I finally found them in a local International food store and they're huge. They weigh over 2 pounds and cost $4.99 USD a pound.

Yes. You may freeze them once you've grated or sliced them and place them in the zip-lock bag. It will keep for about 2-3 weeks in the freezer.
