I agree. The minute you start adding egg and seasoning the meat, you are moving into meatloaf. Chefs are always trying to add flavor depth and layers of seasoning throughout the cook at all stages, it works for many dishes well, but not burgers.

Yeah, as a burger enthusiast who has grilled a lot of burgers, I’ve never even considered putting an egg in the mix. I have seasoned burgers before forming the patty, but I don’t do it now and haven’t for a long time. I just season with pepper and adobo on the out side. Doesn’t need anything else. Might as well call that the meatloaf burger.

I'm glad you did this - that was my exact thought when I first saw Ramsay's burger video. It's like the burgers I used to make in the UK 15 years ago before I knew better. I've eaten at one of his restaurants and it was a sublime experience, but I'm happy I'm not the only one to disagree with his burger technique.

Yup! Just like I said in the video, we had an amazing dinner at Hell's Kitchen, but when we went to his burger place a few years ago, it was way too rich. I was wondering if this was a English or Scottish thing with his burger prep, or just the need to go over-the-top, since he is a chef.

Well that burger sure looked good as I'm sure it tasted, but I must say, I think that is the first time I have ever seen anyone season the actual burger buns too. I can see where that would be a bit overkill since every other item got salt and pepper as well, plus the additional seasonings in the meat. Either way, I would smash that into my pie hole in a New York second. I enjoyed the video Greg!

you mentioned that wouldnt inject seasoning into a steak...but actually when you dry brine a steak with salt, thats essentially what you are doing lol the salt draws moisture out, then brings that moisture back into the steak with the salt. seasoning the inside of the steak as well. but i do agree, with a burger, just add salt to the top of the patty and call it a day lol

I've never needed to add anything to my mix in order to make sure it doesn't fall apart. I do season my mix just a little before forming my patties. Then I season them again on the outside before they hit the grill, my smoker, or flattop. Best burgers I have ever had anywhere. The egg is definitely not needed as long as you have enough fat in your mix.

The way Gordon does his burgers with seasoning the mix rather the the outside IMO is the typical way we make them here in the UK. We also tend to cook them well done, not medium like you tend to find over in the USA. But I get your logic with cooking it like a steak, if you've got quality meat and it's something I'm going to try next time I do burgers. Good review definitely subscribing.

Jerk burger 🍔 recipe. Cover your entire patty in mckormicks Caribbean dry jerk spice. Brioche buns toasted. Carmelized onions. Cilantro 🌿 Lime crema sauce (tons of variations but just stay simple). Freshly sliced guacamole 🥑 slices. Swiss cheese if you like cheese (i dont). Best to let burgers marinate in seasoning for 30 min before cooking patties! Enjoy 😉

I've grown up seasoning burgers that way, but that is usually when I'm cooking burgers in a skillet and not on a grill. My mother used to even use Lawry's Seasoning Salt. I'm from the hood so that is how we got down. Seasoned burgers like that, crinkle-cut french-fries, and red Kool-Aid. 😂 I'm not putting no egg in there though. That's basically one step away from meatloaf or a pulpeta (which is something I'd like to see you cook. 😊) You are right that burgers don't need a LOT of seasoning. You can get away with just salt and pepper really. Especially if it's just 80/20. If all I have is lean beef then I choose to season it more because of the less fat content, however I try not to use lean beef for hamburgers. Just doesn't taste right to me. I usually just use SPG (salt, pepper, and garlic) on beef whether it is burgers or steak.

It's funny, I grew up in a very blue collar family and one of the things my mom made me for lunch was peanut butter and Kraft sandwich spread sandwiches. The best way to describe "sandwich spread" is mayo combined with dill pickle relish and paprika. I have never had pulpeta, but I love Cuban food and meatloaf, so I'll give it a try.

I would like your opinion on this. If people want to incorporate seasoning into a burger, they normally knead it. This turns it tough and bouncy like a sausage or meatloaf. What I've never seen is why not chop up the muscle cuts into 1 inch cubes, and then season all those cubes before you grind. Wouldn't seasoning your cubes put the seasoning into the burger without making it tough?

Yeah man. I haven’t tried it but beef is the super star. I wanna taste it. Especially if it’s fresh. The only time I could see “adding” things to the mince is maybe if you were trying to season up on of the slime tubes of meat. In that case maybe it could improve it but no way on fresh ground.

My dear ol dad would make burger patties using an egg yolk, he was a cook in the Chicago area at some up scale restaurant in the 70’s, he’s gone now so I can’t ask details, I just know that was something he did when making a burger.

So, one of the things a creator can see in their analytics is video retention. You can see when people skip parts of a video or go back and watch parts again. So many viewers just skipped my bumper I just thought I'd experiment with dumping it. What are your thoughts?

@@BallisticBurgers my thought is I’m not a content creator, but I am someone who knows you can’t please everyone but you do, as a content creator, need to work with your product in order to make it the most beneficial to you while pleasing the largest chunk of your audience. I find the bumper to add a bit of a professional “real TV”, whatever that is anymore, feel. But, I’ve also seen a bunch of other content creators-some with bumpers shorter than yours-nix them in recent times, as well. So, your data finds don’t seem to be uncommon. Eh, I’ll survive. ;-)

My issue would be that using whole muscles, grinding them together for burger mince, I would cook it medium rare. I also prefer to season just the outside and form a nice crust.

That was a great video The reason why Gordon Ramsay season is neat that is a pure UK British thing that is later a prep thing have been around for almost 50 years when it comes to burgers for almost any kind of ground meat now think about it it's always been like that the UK rules and regulations you just know you do it automatically That's reason why it still takes good but obviously it feels a little off if you not part of that country

I couldn't agree more. That's a "seasoning sandwich." Using a great grind and mix of beef like that, and then adding all of that seasoning to it is bordering on criminal. Good food needs to speak for itself. Excessive seasoning is used to cover up crappy food. (Kind of like excessive hops in beer... but that's a whole 'nother topic.)

I've done garlic butter before. If everything else on this burger wasn't salted, the bun would have worked better.

Boy Greg you like stepping out there! But I agree way too much salt and it had many of the ingredients to make a meatloaf. Give me some ground brisket with a crust etc.

Gourmet chefs need to stay away from burgers, they always try and show off, but the joy of an outstanding burger is in making simple ingredients taste amazing. Paid up member of the no binders club.

You are so right! Now, a lot of high-end chop houses in the US totally get it. I think because they are steak/beef experts they go simple, yet elevated and crank out some KILLER burgers!

Couldn't agree more brother... "let that beef talk for itself"... it just doesn't need it! I want to taste the good quality beef, especially if you're using something like short rib. Season the outside of the patty, and sear that baby like a steak! Great job either way! You always kill w.e burger your cookin, and I'd LOVE to be a guest in that dope backyard eating one of your burgers lol.. As a huge fan, what's your FAVORITE Burger of all time? the only things that really need seasoning on a burger is the tomatoes imo (i still season the beef cause why not :P). Since the beef can talk for itself, if you consider your sauce is packing a lot (or if you are really a purist regarding beef a burgers and prefer no sauce) the caremelized beef and toasty buttered bun and maybe a slice of cheese is all you need! It's assuring to know you can strip your favourites back so far and get so much out of them still

I agree with you Greg no need for egg yolk you are making a burger not meatballs. If you use the right proportion of ground beef to bacon/fat they wont fall apart.

I'm a fan of yours Greg and I completely agree with you 100%! In fact, I get so frustrated with the practice of salting everything we eat. In my opinion, salt does one thing for food...it adds the flavor of salt. If you have to add salt to everything to "enhance" the flavor, you've already failed. The flavor should be in the food, not theSeasoning. Don't get me wrong, I love some seasoning, but salt in the meat, on the meat, on the bun, on the onions, on the tomato...for the love of God STOP!! I want to taste the food, not the seasonings.

Thanks Greg! - I lost count of how many times you added salt - six, seven, eight? - I agree - what you put "in" that meat was basically a rub. Then there's the cooking method - a closed lid is basically baking, not grilling. As you say, I'm sure it was very tasty, but it defies many basic burger techniques. - Oh well, that's Ramsay... - lol - Cheers!

When I was 12 I got severely sick from undercooked ground beef. I had to stay overnight in the ER on IV fluids. When I saw Ramsay undercook his burger I immediately said nope. Steak is one thing but not ground beef. Not for me.

I would still be very happy to eat that burger. But yes, sometimes Gordon goes a bit overboard with seasonings and additives, almost as if he forgot the taste of simple yet pure ingredients.
