About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZbin.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

Just Some Guy without a Mustache The tail muscle fibers of lobster and shrimp are naturally arranged for flexing. The only thing it can do is flex to cause the tail to curl. When removed, fresh tail still has nerves that can fire. So when the nerves fire, we see the tail curl.

Also not all reflex circuits require nerves to be routed to the brain. We can reasonably infer that the press reflex on the lobster tail is a reflex arc that doesn’t require wiring to the nervous system.

I think they may have made an exception for this lobster because they may be using the head in another recipe as an art piece, so the usual slaughtering technique may confound their plans.

@@chefgarrin It is a type of the sheet made from soy and it calls " Soy Wrap Sheet or Soy Nori " There are a couple colors that you can choose and this made for people who cannot eat seaweed.

Hiroyuki, Years ago I was in Portland, Maine. Across from my travel lodge was a McDonalds and they had McLObster. It was a LObster roll and although I did not want it, I am sure it was nothing like your creation:) At that time you could get fresh Lobsters along the road for $2.00 a pound and even down the New Jeraey shore where I grew up, Point Pleasant, Briells, Seaside, Lobster dinners including steamers , a Shrimp Cocktail and all the fixings were relatively inexpensive. Looks tasty! I'd add some hot sauce to the butter. In SLO county we have a jalapeno hot sauce made by "the pepper plant" you should try. Deep complex flavors. Probably in the bay area by now too. You may want to check out Morro bay's commercial fishing and food scene.
