Today's recipe is for a tea-flavored milk tea mousse.
You can also add black tea leaves to the sponge cake to enjoy the aroma♪

▷Ingredients (φ15 cm)
■Black tea sponge cake
3 whole eggs
60 g sugar
45 g cake flour
5 g tea leaves
25 g hot water
▷How to make:
1. Pour hot water over tea leaves to soften them.
2. Add sugar to the whole eggs and mix until blended. Beat the eggs in a hot water bath until the temperature reaches 30℃ and the mixture becomes white and fluffy.
3. Sift in cake flour and mix until glossy.
4. Add the tea leaves and mix.
5. Line a 375mm x 240mm mold with a cookie sheet, pour in the dough and flatten it out.
Bake in a preheated oven at 180℃ for 10-15 minutes. 6.
6. Remove from heat and cut out 2 pieces of 15 cm in diameter.
■Tea & milk mousse
6 g tea leaves
30 g hot water
150 ml milk
5 g gelatin sheet
2 egg yolks
40g sugar
200ml heavy cream
15g sugar
20-30 g white chocolate
▷How to make
1. Soften tea leaves in hot water and add milk. Warm over low heat for 5 minutes, then remove from heat.
2. Blanch the gelatin sheets in ice water.
3. Add sugar to egg yolks and mix until white. Add (1) while straining the tea leaves and mix.
4. Heat over low heat, stirring constantly, until thickened.
5. Strain the mixture, squeeze out the water from the blanched gelatin and add it to the mixture to dissolve.
6. Add the sugar to the cream and beat gently while chilling in ice water.
7. Add the cream to ⑤ and mix.
8. Line a mold with a cookie sheet, line with black tea sponge cake, and fill the mold halfway with mousse. Place the sponge cake on top and fill with the remaining mousse. Refrigerate overnight.
9. Shave a thin layer of white chocolate and decorate on top of the mousse.
