The ginger bread cookies I've made in the past seem too "bready" to me - not crispy enough. Yours look crispier from the "broken neck" at the end of the video . . . am I right?

You can also roll them thiner, so they will be less "bready" (but cook for a shorter time)

Yes you can! You can roll the dough out flat on the cookie sheet and cut it after cooking. Or use a square cookie cutter.

If you keep the dough longer in the freezer, you may need to wait a but for it to defrost a bit before rolling it out. And yes shorter cooking time for thiner cookies.

I never tried it without, so I can't say. Molasses give flavour and not just sugar to the recipe so I think it's better with.
