Boneless chicken breasts, are super common, because they can work in thousands of different dishes, are fast to make, and work with a ton of different flavors. The downside, is that they are pretty easy to overcook, or just cook quite blandly.
In this video, I show you a simple technique for pan roasting boneless chicken breasts. I just a few spices to add some flavor, but even with just salt and pepper, this technique will help get a crispy, flavorful outside and a moist tender center.

Best chicken I ever made in my life. Nice and juicy. Going to follow this method all the time now. 3 minutes one side, 2 minutes the other. Then 4 minutes in oven at 400 degrees. Thank you sir

Lush worker turned out great! I had to keep mine in the oven for about 6 minutes or so because they weren't quite up to temp. I'll definitely be making this again.

I just made this in my cast iron skillet and good-ness. I thought my chicken was the best but I have never had oven baked chicken like this before. That sear really makes a difference. Hands down one of my favorites. Will definitely be making this again. Cheers!

I watched this video before I cooked my first chicken breast ever - it came out flawless!! I did unfortunately mishear the over temp, but it was still moist and delicious. I just used salt, pepper and a little lime and it was awesome. Thank you for teaching me to cook my first piece chicken!

I freakin love you! Hahaha, first time cooking chicken, about 5 min sear both sides, and baked it 8 min at 400 degrees like you said and it came out great!! Only used pepper and salt and my roommates dug it!

The honest answer is practice and repetition. There are signs you're looking for...when cooking like the edges of the chicken will turn white as they cook...that's about the time you want to flip. Then after a few minutes, the chicken will firm up to the touch...and with practice you can tell what a raw, perfectly cooked, and over cooked chicken feel like. Use a meat thermometer until you get the hang of it.

i put it into a bowl and just go crazy with spices. I throw in a bit of everything and a bit of lemon juice at the end. Then i put aluminium foil on the bowl and put it into the freezer. I wait 2 hours and throw it into the pan. I really dont know if it is the right way to do it but it tastes ok and im a student so i dont give a f as long as its cheap :D

I know this video is old, but this was the juiciest chicken breast that I've ever made! Didn't think to pan roast 1st/sear. Wow! What a difference! Will always cook it this way. I forgot how long you said leave in oven and cooked mine for 20 minutes, 10 min each side and it was super juicy. The chicken breast that I had was larger than yours though. For the oven part I just covered the pan with a lid and it came out great! I used a nonstick pan.

You can do it all on the top of the stove. You'll have to flip is a couple more times. You can also try using a cover on the pan, creating a pseudo oven!

I had heard sautéing in olive oil is carcigenic once it reaches a certain temperature & puts off the steam/smoke, so I'd use a different oil.

Youre right. It burns at a low temperature. Canola oil has a high viscosity and is good for frying. Olive oil goes is for foods that use a lower fire and towards the end

Although he said chicken breast are sort of like a “blank canvas,” I personally think this is a good dish on its own. You can combine it with some rice or something light and you have yourself a dish. I like how he seasoned the meat, and how he told us what he seasoned it with. These are actually Boneless and Skinless...including "skinless" makes my video title longer than I like it ;-) But yes, I would use the same technique for either, with the additional point that if you are using skin on chicken, sear the skin side first

i have just started to cook for myself, so some of my questions may seen silly but after you cooked them on the pan, both sides and then for 7 mins in the oven at 400 degrees? my question is this.....do i put the chicken in the oven still in the pan or do i have to remove them and put it on a cooking sheet? will my pan melt or burn in an oven? are they designed to withstand that kinda heat and still be ok?

There is no bowl, he just put the pan with the chicken breasts directly into the oven to finish.

How long do you leave in the pan for both sides and how long to you leave it in the oven.

Hard to give a specific time as chicken varies in thickness. Very think, and just 3 - 4 minutes per side will do it. Thicker, then I do the same, and then put into the oven for another 3 - 4 minutes. Most important is to get a good sear on the outside,and learn to tell,with practice, when they are cooked through.

400 degree oven. The real answer on time is "until it's down". That will vary depending on your oven, pan, and chicken. 3 - 7 minutes is the window.

Very helpful, just wondered, with the tongs, you touched the raw chicken but also when you flipped it, what is best for safety purposes? Hoping you can help. I don't want to get salmonella

You do need to be careful of contamination. When I flipped the chicken it was still cooking...so the germs will be killed off. Once seared on all sides, make sure you wash tongs (or whatever else you have) so they don't touch cooked meat.

You can never be too careful, I believe watching contamination on any level is good.

+mike evans I reuse tin foil that I have used to line cookie sheets. I even put the pieces through the dishwasher and then keep all the pieces in a plastic bag that I brought produce home in. Then when I'm going to sauté, I use them to fashion a covering for the top of the stove, obviously leaving a circle for the burner. You can throw them away or run them through the dishwasher again if you plan to reuse them. You could even wash them by hand, but that would defeat the point of not having to clean up after sautéing! ;)

Just start cooking small stuff and slowly but surely you'll learn. It's fun and beneficial. Something good to start with would be a steak. Gordan Ramsey has an excellent video on how to cook a perfect steak in a pan, and it's extremely simple. You only need the steak, butter, thyme, and garlic, in a pan with some olive oil. And it's delicious.

BlinkinFirefly usually, in my experience, the breasts comes with the bone, ppl sell boneless chicken breasts. when I cut up a whole chicken I cut out the breasts without bone. No one is wrong, just different experiences.

Iv actually tried it and it tastes amazing! U can put any seasoning u want, I rubbed in some salt and pepper and alittle of BBQ suase, it is unbelevabily tasty and perfectly cooked outside and in. I loved it.
