1/2 tsp sugar

50g dried hijiki
2 tbsp sesame oil
2 tbsp sake
2 tbsp mirin (sweet cooking rice wine)
2 tbsp soy sauce

50g hijiki mushrooms boiled in soy sauce
3 eggs
2 tbsp sake
2 tbsp maple syrup (or sugar)
A pinch of salt
A dash of oil

50g dried daikon radish
50g green part of leek
10 g fresh ginger (grated)
2 tbsp white ground sesame seeds
1 1/2 tbsp soy sauce
1 tbsp vinegar
1 tbsp sugar

80 g vermicelli
1 eggplant
1/2 onion
2 tbsp sesame oil
200cc soup stock
2 to 3 tbsp mirin (sweet cooking rice wine)
2 to 3 tbsp soy sauce
1 to 2 tbsp sugar
A pinch of red pepper to taste

100g boiled soybeans
Vinegar to taste
