This cake was delicious!! I sliced it in half down the side and in the middle of the two layers I put homemade blueberry jam and on top vegan frosting my family loved it! And I’m only 14

Instead of oil i used a banana.Instead of sugar i added natural dates sugar. I added some dry rasins and bittersweet chocolate chips. I avoid oil as much as possible. Btw vegan for over 8 years by now. Thank you for all yr vegan recipes. I look over them!

looks very delicious my first thought was love to try. caught myself thinning need to get cream and strawberry's at the sore tomorrow. then realizing cream is the wrong thing to put on a vegan spongecake.

I just made this cake as I have guests coming over. I took a risk but omg it's so good!! So quick and easy to make. Definitely a keeper. You can put jam, lemon icing, chocolate ganache or any other topping/filling. I'm going to serve it like it is with custard. Thank you so much. By the way I'm vegan too and all vegan cakes taste so delicious compared to using eggs and dairy. So much lighter!

Thanks Kirly Sue, I love this recipe. The cake has a good texture and it tastes really good too. I have vegans and non vegans in my household and this is the first cake that I have found that everybody likes. As a variation, I left out the vanilla essence and I added some lemon zest and lemon juice to the recipe and used a glace icing with a little lemon juice in it too. It was very popular! I am looking forward to trying out some other variations :-)

@@stadtjer689 I know going vegan is good but needs time for this transition....btw the eggs are now in stock. But after months of shortages I am used to vegan baking and saves me money using less ingredients.

@@stadtjer689 To be honest, I tried to go vegan during my teen years but living in a house full of carnivores (and I was raised as a carnivore), it was difficult and I gave up. With this self quarantine I've been growing veggies. And because of health issues I'm trying to cut back on beef. Thanks for your reply.

I've been home with my non-vegan family and it's been relatively problem free other than snacks! Most snacks have milk or egg powder. Especially now it's a lockdown and I just want to snack all the time lol. My mum brought home a cake I used to like but she forgot that I eat plant based but I was determined to have cake because I have a sweet tooth and it was Easter. I prepared and baked this cake in under half an hour. I've never been so impressed! It was light and fluffy and sweet. My younger sister and I nearly devoured in one sitting haha! Thank you so much for this recipe. Not to be dramatic or anything but you're a life saver hahaha!

Just made this, turned out really good. Used vegetable oil and cashew milk instead of original recipe. Was a bit worried as i could taste the vinegar in the raw mixture but it was gone once it was baked, texture of the sponge is light and fluffy but it does turn a bit gluey as you chew it, though that isn't a problem for me. Thanks for the recipe:)

It would be incredibly helpful if you would put the weight in grammes of ingredients as well as US cups. I used a converter site online but the weight equivalent for sugar, for example, varies hugely, depending on what type of sugar I chose on the converter site. Thanks

Pro tip: Cut a round piece of parchment paper and line the bottom of the cake pan. Oil does not always prevent sticking. Only lots of butter does but obviously we are not going to use that. - I'm a pastry chef. :)

How To Make A Vegan Sponge Cake recipe video Vegan Sponge Cake Recipe Prep time: 15 mins Cook time: 20 mins Total time: 35 mins Ingredients Dry Ingredients: 1¼ Cups Self Raising Flour ½ Cup plus ⅓ Cup White Sugar 1 teaspoon Baking Soda (Bicarbonate soda) 1 teaspoon Baking powder ½ teaspoon Salt Wet Ingredients: ⅔ Cup Unsweetened Almond Milk (or other Non-Dairy Milk) ⅓ Cup Canola Oil 2 Tablespoons Apple Cider or White Vinegar 2 teaspoons Vanilla Extract Instructions Preheat your oven for 350 F (180C). Line and lightly grease the pan. In a big bowl, whisk the dry ingredients together. In another bowl, mix the wet ingredients together. Then pour the wet ingredients into the dry and whisk that up. Whisk until the batter just comes together, don’t over mix it. Put batter into the cake tin Bake 18-20 minutes until the tops are slightly golden.

Thanks for the recipe. I used soy milk and added a lil more milk bcuz I thought it was too thick :-(. I added coconut oil because I had no other choice, added few dry cranberry, a pinch of nutmeg and cinnamon. I don't have any vanilla but can't tell. OMG. My recipe came out AMAZING. Thanks Edited: I also added a tiny amount of blended dry orange peel. My 3 year old almost ate off the entire cake. He keeps asking for more.

I made this according to the recipe and loved it! Very easy to make and goes well with a number of toppings like frosting or jelly. I even experimented with the recipe and substituted the 2/3 cup water for 2/3 cup pineapple juice- still delicious. This recipe is great for people making something sweet and vegan as well as beginning bakers. Thanks!

Had to come here and write a feedback. I tried this recipe and it was BOMB! Super delicious! Thank you, beautiful! ❤ I'm gonna use this recipe to do all my cakes now. Add cacao powder to it, you have your chocolate cake. Add fruits to it, add nuts to it, add anything you want... as long as you keep the exact measurements of this basic cake. :)
