I've always layered my potato slices, onions, cheese and sprinkled a bit of flour and dot with butter in each layer then added the milk or half and half. This is the second video I've watched where the sauce is made first and I like the idea bc its faster to assemble than my way. I'm making this for Christmas day with a baked ham. Thanks Chris. With 7.7 million views on you channel, you might want to tell us a little more about you and your passions on the "About" page. With all the videos I saw listed on your channel you might want to think about writing a little (on demand cookbook). Amazon and a whole lot of smaller companies could walk you thru that, and it doesn't cost much at all nowdays . Who knows? More amazing things have happened. Thomas Strickland Probably a good idea to start the roux with the bacon drippings. Then add the bacon at the end of the cooking process.
