Man to hanooz yodame, zamani ke to Iran daneshjoo bodam, az in ghaza baramoon dorost mikardan, kheili khoshmazeh bood. I’m so glad to find this recipe after so many years ❤ daste shama dard nakone. Motashakeram 👍

it was the first time that I see sugar is added to eggplant Stew! your video is very informative, brief and fast. thanks for sharing

NO SUGAR!!!!!!!!!!!! Adding cinnamon gives the added sweetness as this dish is not a sweet dish. Do not add sugar.

Hi, thanks for the video. I cook same as you but lentil I cook separately then add then add them because last time they weren’t cooked properly.

I'm from UK, what do you you mean by 'strained' tomatoes? Is it passata or a strained tin of chopped tomatoes? Love this recipe - thank you so much. x

You can absolutely use any kind of tomato purée that you have or even use couple of tea spoons of tomato paste instead :)

Can you please include spice measurements, I know it’s to your desire but I am new to Persian cooking and it will help.

Absolutely, so for this dish you can put one teaspoon for all the spices except black pepper that is half a teaspoon:) Thank you so much for your comment and please let me know if you have any other questions ☺️

Do you ever add fried potatoes? That is how I have always eaten this stew. I’m going to try to make your recipe.

We usually do either fried potatoes or fried eggplants. But of course you can add both if you like, I’m sure it will be super nice 🌹

Is there a reason why the lentils are added after the meat is cooked not in water

if you sauté the lentils it prevents it from getting mushy:)

دستور عملی قیمه بادمجون، بهمین سادگی، در ۶ دقیقه و بدون ور ور اضافه مثل اون یارو و مادرش که ۲۷ دقیقه مخ آدمو میخورن!

I think the peas will be over cooked if we put it atvtge begging eith meat as the meat takes tie to be cooked can u correct my information please ??

H Wafa, Thank you so much for your comment. It actually all depends where in the world you live, in North America meat cooks really fast but back home you have to use a pressure cooker to cook the meat or it will take ages. Also there are different kinds of yellow split peas. Some cook really fast and some not. I used the ones from Iranian supermarket that specifically says on them cooks late. So the combination works for me but of course you can always cook your peas separately and add them at the last 20 minutes to your stew 🌹

The sugar will give your stew a beautiful balance. And takes away the bitterness of the eggplant , you don’t need a lot thought just a little:)

سلام روش حرف میزدی بهتر بود بعد به انگلیسی زیر نویس میکردی زیر نویس نا خوانا هست دستور پخت را با اون فارسی قشنگ و صدای خوبتون توضیح میدادید و به انگلیسی درشت برای ما که چشممون ضعیف هست بنویسید ممنون بابت دستور پخت خورشت قیمه بادمجون

ترش و شیرینی خورش کاملا سلیقه ای هستش میتونید اون قسمت رو حذف کنید ولی من انقدر شکر کم ریختم فقط برای اینکه تیزی بادمجون رو بگیره و یه بالانس خوبی به خورش میده .

نصف مطلب نا مفهومه. به خاطر اینکه صحبت نیست، باید چشمهایم را بدوزم به تلفن. همچنین دارید چیزهایی میریزید که معلوم نیست چه هستند. متاُسفم، ولی از این ویدئو هیچ خوشم نیامد. 😔
