Hi Joy, That is a great question!! I believe it just takes a bit to soften the sour taste and does not affect the rise - according to James Beard. I have not tried it since I love that little bit of tang! Love, Mary

when you say let it sit for an hour after you have mixed it all together until doubled mine didn't even look like it moved in an hour ,so do I just leave it for however long until it doubles then divide it or just do the hour?
