You can it it’s set to warm. Otherwise it will overcook the eggs.

Thanks! Just use a regular pot/saucepan and simmer for 1.5 hours instead of the pressure cooker.

This was very good but next time I will put the star anise and cinnamon in a tea strainer. They broke up during cooking and mixed into the broth, so some bites had a big chunk of star anise or cinnamon, which was not good.

looks really good but is there anything i can substitute the shaoxing wine with? also whats the difference between regular soy sauce and chinese? can they be substituted and if so how the flavor will change? I don't that much space and my cupboard is spitting spices every time i open it, thanks :)

you can use dry sherry or Japanese sake as substitution. There're many different types of soy sauce. In general, Chinese soy sauce is more robust in flavor and saltier than other soy sauces made from other Asian countries. You can use any regular soy sauce. You might have to adjust the amount accordingly. Thanks for asking! :)

I love lu rou fan so so much. I noticed that you added mushroom which is very interesting. May I know if it's your own cooking style or this is how authentic lu rou fan supposed to be?

I often see a lot of home cook recipes have shiitake mushrooms, but most restaurants leave it out. That's why it is listed as an optional ingredient in the recipe because some people don't like the strong flavor of shiitake mushrooms. I guess that's why the restaurants don't include it. I personally like it so I added to the video recipe :)

the pork gets hard but the fat is soft. Ideas why? I put into instapot for 35-40 mins
