Indian cooking is my passion, as well as eating it, lol. Hubby & I have enjoyed dining out at various Indian restaurants for many, many years, but we're retired now & can't afford to eat out much anymore. For this reason, I've been teaching myself to cook various Indian dishes from cookbooks, videos & blogs. I even bought a Dhabba (sp?) years ago, & LOVE it! I cut with knives exactly as you do & feel a kinship with you, lol. Fortunately, we have the opportunity to shop at a store in our town that is owned by an Indian family. We're able to get fresh curry leaves, really healthy cilantro, big plump rhizomes of ginger, & all sorts of wonderful spices, etc, from them. I'm really happy to have found your videos & will binge watch them for a few days, thank you very much! ❤️

One of the first recipes I made from your Indian Instant Pot Cookbook was "Cabbage and Peas" because I had a lot of cabbage and frozen peas, LOL. It's still a stand-by recipe in my kitchen and it works with other veg, too. I like your updated/streamlined version very much...and I still have cabbage and frozen peas!

Urvashi, I wonder how much you could really teach us about lentils. Americans at least tend to only think of two kinds of lentils, but Indians use so many different dals and pulses that it's amazing. I can't even guess how many times I was told my health would suffer in India due to malnutrition because of a vegetarian diet. Aside from the fact that not everyone is a vegetarian in India (cue eye roll here), people underestimate the importance of things like lentils in their diets. For the record, my digestive system was in seventh heaven in India! I never knew how good ginger and turmeric powder were for me before living there for 6 months. It was fantastic. Thank you for showing us these very informative things and for doing it from a down to earth style. I love it.

I like the way you explain the recipe and suggest different options when it comes to choose the spices , e.g I would like to use cumin alone..

I could not wait...I made this recipe in a cast iron skillet. This is similar to a dish that an Indian friend of mine makes but i like this one much better for the complexity of flavor. I followed the recipe from the website that included the onions and tomato which I believe make this dish stand out. I have been looking for a recipe that is mildly seasoned to pair with spicier masalas and curries and this is perfect in that role. I look forward to making this in the Mealthy pan. This has such a fresh taste it was exquisite!!

Well, today is a Red Letter Day!!! My Mealthy pan came two days early. I am instantly impressed even though I haven't even used it. Even more impressed with the red surprise. This meal of Indian Cabbage with Peas and Carrots has quickly become a favorite of mine and I am anxious to give it a whirl in my new pan. Thank you so much for your influence. It is perhaps the bread I cast upon the water... I freely gave away two jars of ghee to friends, one from Punjab.
