Dear Neena, We bought an instant pot just so we can learn your recipes. It arrived today, and we're psyched! Tomorrow, we will try it for the first time, and the first recipe we'll try will be the Indian Chicken Curry. My wife has been to India a total of 5 times, and we plan to go together one day soon... I like the amount of detail you share on your videos, the tips, and above all, the fact that you are kind enough to share your family recipes with the world.

I’ve ordered my first Instant Pot mini during quarantine! Spicy 🌶 chicken curry is one of the first recipes I’ll want to try. Intentional healthy living, in lock-down, is where many of us “chefs” want to be focused. 🙃Thank you: sounds dreamy good!

Thank you for posting this instapot recipe. I wanted to cook in the instapot today because it was really hot and didn’t want to use my stove (hot summer day). Your recipe was amazing! It was a hit with my family.

Would love it if you could transfer a recipe of Methi Malai Matar, to a Duo Nova 10 qt instant pot. I am a beginner Indian food lover and that is my second favorite dish.

I tried it for the 1st time, not a guy who can cook. It turned out good in my opinion.. I screwed up by using a whole tin of creamed milk and the whole tin of a small tomatoe paste. The taste felt like a sweet Thai flavor. I also added corn starch to thicken it. I liked it, my wife complained it was too sweet. I thought I added the proper masalas as well.. dont ask why Indian people remove the contents from labeled packets and put them in metal open tiffin like things without labeling them.

Hi Brendan, that's funny - yes I use one of those masala "dabbas' too and my husband has to ask me what is what if he happens to cook :) Give it another try and add less of the milk next time, I think you'll like it better.

Adding garam masala without sautéing it a little leaves the spice raw

I make my garam masala with spices already roasted, plus the Instant Pot is very hot for at least a few minutes at the end, but you can definitely heat in Saute mode or even add the gm in with the other spices if you wish.

You might want to check out my Chicken Tikka Masala recipe, which is pretty similar to butter chicken. There are a lot of butter chicken recipes if you do a google search and I think they're all pretty similar. You can speed up the browning of the onions with a little bit of baking soda. I got that tip from Alton Brown (his quarantine French Onion Dip video), it works great. Just if you are in even more of a hurry.

Do you need to add a good amount of water to the curry in order for it to come to pressure and produce steam? If so, doesn't this make the curry very watery? I'm still wondering whether to buy an Instant Pot or not.

Shaz, I am able to get this recipe to come to pressure with about 1/2 cup of water but your Instant Pot may require an additional 1/4 cup (you would need to test it out). It's important to deglaze really well. Using boneless skinless chicken thighs requires less water/broth than bone-in.

I would like not to have to buy a spice I'm not even sure I will ever use again, so if I don't have the kind of chili powder that you used what would you suggest? I do have conventional chili powder.

Yes, you can use your regular chili powder. However, check the ingredients. Many chili powders in the US (esp those labeled Mexican chili powder) have onion, garlic, and other powders mixed in. That might change the taste a wee bit.

Absolutely! In that case, just cook the chicken and potatoes together for 4 to 5 minutes. (No need to release pressure and add potatoes.) Also, if you're cooking them together, you should probably do a quick release or the potatoes may overcook.

Is this (and your other recipes) for a 6 qt. size? And if I have a 3 qt. model can I simply cut amounts in half or do I need to tweak amounts here and there? I've just discovered your channel and this recipe looks delicious. Can't wait to make it.

James, sorry, your comment seems to have slipped through the cracks! Yes, I use the 6 quart in all my recipes. You can halve it. Mostly. The liquid is tricky because this particular recipe uses minimal liquid. Halving it will most likely give you a Burn error. So, I would say keep the liquid the same, and try and boil it down at the end. If you're willing to experiment, you can reduce the liquid by 1/4 cup and see what happens. Let me know how it goes :)

@@PainttheKitchenRed I made the curry and I followed your instructions. In the end, I used almost the full amount of liquid (chicken broth) and the flavor turned out well and I had no issues with sticking or burning. The curry was a little runny so I made my own cashew paste to thicken it up. Thank you so much for responding to my question. I appreciate all that you do online (videos, blog posts) so that we can learn to make such delicious food.

Thanks for the recipe. I burned my masala unfortunately while adding the spices into the onion mixture. Do you have any tips for preventing this from happening in the future? I usually cook like 9lb of chicken at once. Is that an issue too? I have the 8 quart.

Hi there, thanks for your question. I do two things: I deglaze the onion mixture as I find that it's getting too brown, and I also press cancel about a minute before adding the spice to allow it to cool down. You can also remove the inner pot and set it on a heat-resistant surface while stirring in the spices. If you're using that much chicken, make sure you use enough water so you don't get a 'Burn' message.

Hi I'm missing all the ingredients u told to make the gravy a little thicker. Do u know if I can add anything else that might thicken the gravy up or would less water work?

Hi Subramaniam, less water would probably cause sealing issues. I would just cook it down to evaporate the liquid. Good luck!

This recipe uses far too little water (it probably needs a cup of water, not half a cup) and for some models of instant pot will cause them to fail to reach pressure, burning the food. I'd seriously suggest that you give this recipe a big miss

I'm sorry you had trouble with the recipe. Your model seems to be more sensitive. I wonder if using smaller pieces of boneless chicken would be better.
