In Tamil Nadu villages, this is done every day, the left over of the day's rice is allowed to ferment overnight with just adding water. The same is consumed with adding butter milk the following day and the water is consumed with adding salt, we call it ' neer agaram'

In Telangana, we the telugu people make this in a little different way. We add a spoon of curd and a small glass of Milk to the left over rice at night. To the same we add, big slices of onion n green chillies. And leave it overnight. This is taken the next morning. Either for breakfast or lunch. Its said its beneficial to have this as breakfast. But not everyone does in these times.

We make fermented rice too. Leftover rice curd n milk mix n let it become natural curd with rice in it. Mix it all up in the morning, garnish with green cut chillies corriender, yaa don't forget to add salt first. Then mustard seeds with red dry chillies neem pata, tadka. Leave to cool in refrigerator. So cooling n refreshing

If you are b12 deficient, go for doctor prescribed supplements. Fermented rice won't increase them quickly. It takes time and also depends on the type of rice used, duration of fermentation

I cook rice in the morning. Then use the leftover rice for fermentation at noon. Rice won't get spoiled so easily. You can use the same rice for fermentation. If you want to eat Fermented rice the next day, cook it today. Then mix it with curd/ buttermilk or water and salt and mix well. Leave it for fermentation at room temperature. If it's extremely hot at your place, shift the rice after fermentation for 6 hours in the fridge. Else keep it outside.

So you can't depend on food ferment for a b12 deficiency. However, it surely is a great way to maintain your b12 if you have no deficiency. I never said you can depend on fermented rice for a deficiency. But making it a part of your diet can help you in the long run.

Dear, I will post a new short video on your query ..stay tuned...the only thing is that in hot weather, if you plan to ferment rice overnight, shift it to the fridge after 3-4 hours. Fermnetation will go on in the fridge too , but at a slow pace...fermented rice doesnt go bad easily if you add salt to it... it will only taste sour...remember, fermentation is one of the best ways to preserve food...iwill share more tips in the video.. hope that helps.

That's a wrong notion dear. We use salt for lacto fermentation projects. In fact, salt acts as a preservative and prevents spoilage. It doesn't hinder the fermentation process.

@@jeenjohn1291 no dear, it won't be spoilt. You may use the morning rice. You can keep this fermented rice as is for 2 days. It doesn't go bad easily.

Hello, without curd, i just place cooked rice ( lunch leftover)and add water n salt. Let it sit for 6 hrs at room temp and then eat everything at dinner. And thats B12. Right?

@@suzielama7286 if you are deficient in b12, then this kind of supplementation will take long to replenish your levels. in that case, please take b12 supplement as prescribed by the doctor because too low b12 can cause a number of serious problems dear. However, if your b12 is okay, fermented rice is the best way to maintain those levels. i hope that makes sense.

But if i use leftover rice, then im cooking it the normal way with the optimum amount of water and not discarding the excess water (because there is no excess water). So the starches will still be present. Will it work then too?

Well, yes, it works. However, try to get rid of the excess starches... Don't discard it though, you can use it as a hair conditioner.. It is good for skin. You can give it to plants . I never waste it.

Nothing like that.. Using these aluminum vessels has been a part of the traditional culture of Odisha. It is low quality aluminum that's a cause of problem. Don't see everything in the same eye. Be considerate about other cultures.

sister you are confused ... b12 probably does not come from fermented rice but from other foods that you consume ... in the recipe you show you are adding curd which is made from natural milk and therefore will naturally have b12 ... in fact that b12 will be already be in available form because curd itself is a fermented food and when nutritionist says we get b12 from animal foods it includes milk ... usually by animal food in west is meant meats but animal foods category contains milk too ... your pronunciation of odia words is atrocious but that is separate topic ... odia people will have no problem sourcing b12 because they eat meats ... you should emphasis that b12 of your fermented rice is coming from curd and not from rice or any other stuff you are adding ... in fact you have not answered question you are asking in title of video: Is Fermented Rice Rich in B12? ... and on the other hand created false impression that b12 is coming from rice ... in fact in america you could go to jail for providing false medical information

Thank you. Different people different thoughts. But trying to follow heirloom recipes from different regions. Nobody knows your body than humans themselves. Age old recipes are therapeutic too. The same goes with dahi kakudi ( cucumber). So there's nothing wrong with using both. It's your choice what you wish to follow. We love what our ancestors ate.

No dear..it will go bad..you can add little bit of this boiled water for fermentation but don't use all of it
