⬇️⬇️English recipe follows⬇️⬇️ 鹹酸菜豆腐乾炆三文魚 材料: 急凍三文魚扒1件 鹹酸菜半包 豆腐乾2件 辣椒仔2隻 薑5片 蒜頭5粒 處理: 1. 三文魚,打鱗。 2. 三文魚,放碟上,加入粗鹽半茶匙,乸2分鐘,去除雪味。 3. 鹹酸菜,清水浸10分鐘,去除鹹味。 4. 豆腐乾,清水洗乾淨,廚紙索乾,切厚片。 5. 辣椒仔,去椗,打直1開2,去籽。 6. 薑,去皮。 7. 蒜頭,去皮。 8. 辣椒仔,蒜頭,清水洗乾淨。 9. 薑,切片,切絲。 10. 蒜頭,一半切片,一半切碎。 11. 辣椒仔,切粒。 12. 三文魚扒,清水沖洗乾淨。 13. 鹹酸菜,清水洗乾淨,揸乾水,切片。 烹調: 1. 大火在鑊內燒熱油1湯匙。 2. 在三文魚上撲上少許生粉。 3. 放三文魚落鑊,煎香。 4. 三文魚,一面已煎至金黃色,反轉繼續煎。 5. 三文魚,兩面都已煎至金黃色,擎乾油,放上碟。 6. 豆腐乾,爆香。 7. 加入薑片及蒜頭,炒勻。 8. 加入鹹酸菜,炒勻。 9. 加入清水30毫升。 10. 加入調味料: a. 蠔油1茶匙,炒勻。 b. 糖1茶匙,炒勻。 11. 加入清水20毫升。 12. 放三文魚落鑊。 13. 冚蓋,轉中慢火,炆2分鐘。 14. 完成,上碟,可享用。 Braised salmon with dry soy bean curd and mustard Ingredients : Frozen salmon 1 No. Mustard half pack Dry soy bean curd 2 Nos Chili 2 Nos.
