My Mom worked as a bartender/grill cook at a small country/western bar. She handled the bar and grill both somedays. She cleaned the grill EVERYTIME she was done making whatever order. Not to mention hand made the hamburger before putting on the grill. Those were the best burgers Ive ever had.

It aways angers me when they say we don’t have the stuff to clean. What! Do not have a sink and hot soapy water 🤯 the lowest level basics of cleaning.

Any food prep job I've had, after the kitchen closes, we stay like another hour after to finish thoroughly cleaning and these weren't high end places. You can start breaking down a little before it's officially closed but consistently sweeping/mopping through service when it's quiet.. Bring all cutting boards to dish or scrub them down yourself. Take everything out of the coolers and rewrap/date with the day's date and wipe them down. Wipe all counters, etc. They have food safe disinfectants for restaurants. Scrape and wipe down the flat top/grills. It's teamwork, I don't think all of it should rest solely on someone's shoulders. It takes like an hour but just blast some music and get through it. We all want to go home, duh but at least where I live, the health inspectors take their job seriously. Best place I worked had a schedule for what days things should be done so it didn't turn into like a 3 hour job at the end of the week. No one is "passionate" about cleaning like that but you definitely taste the difference in the food. I ordered a burger and fries from a pub the other day and it was inedible, there was flat top grease and char on the burger, the fries were incredibly soggy and I could tell the oil hadn't been changed in a while. I just wanted a refund, they offered to remake it but anything coming out of that kitchen was gonna suck
