I made this an hour ago. I cannot believe how good this taste. I used monk fruit erythritol I was shocked that yes I am eating cake. Only thing I may leave a little oil out worth making again. I am borderline diabetic and keto, husband is insulin-dependent and refuses to try anything keto. So last week, I decided to make this cake. He said, you haven't put anything "funny" in it. I am diabetic as well and since I started Keto I lost some 50lbs and my diabetic numbers have come down a lot. Mind you, I don't fallow Keto religiously, I use it as a guideline for my new eating lifestyle. When I end up at a restaurant I try to order towards Keto as much as possible.

thanks for posting such a nice video. Made last night as I was looking for something like this with no flour. I did use 1/3 c. sugar as that is what I had and I'm fine with that. It is not too sweet and yes it will work as a "treat" with peaches and strawberries.

My whole family loved this! I used lemon extract and made a keto lemon glaze. A perfect lemon loaf. And I usually do not bake keto bc I don't like almond flour texture. But this is heavenly. Thank you oh! And I used vegan cashew milk yogurt. Still wonderful!

I made this and loved it! SO EASY! It was a little bit not sweet enough for me so started sprinkling extra powdered Erythritol on it and OMG it’s so much like powdered sugar donuts!! I’m going to bring this the next time I spend the night at a relative’s house. Also, I mixed heavy cream and Erythritol with the Greek yogurt for a creamy, almost soft serve ice cream like dessert. I used instant coffee as a flavoring but I’m sure it will be delicious with anything. Next time I’m going to try strawberry!

Love this cake. I added a little more sugar. The texture is a little "wet" even though it's cooked through; mine only took 30 mins to bake, in a 9" loaf pan; might add a TB+ of coconut flour to absorb some of the wetness, and maybe add some lemon or orange zest and extract next time or a cinnamon marble for a flavor change. Spread just a 1/2 tsp of sugar-free raspberry preserves over a slice, it was amazing.

Ok, it’s me again with the results of this cake. It is fabulous ( used coconut flour ), I cut it 2 half and filled it up with sugar free Nutella and caramel and it ended so delicious. This cake reminds me the wedding cakes from where I’m originally, usually covered with marzipan and beautiful decorated. Bottom line a success. Congrats. I’ll stop baking for a week as I’m going to prolong fasting, but I’ll come back may be with one of the chiffon cakes.😉

I screwed up bad! I had 1/2 cup of yogurt so used sour cream to make up what I didn’t have. I don’t use my expensive Masseys vanilla on a first time cake so I grabbed the banana flavoring instead of vanilla. When I realized the mistake I put walnuts in the mix. It is so good! This recipe is very forgiving! Will be using it a lot in the future!
