PROBLEM SOLVED!! Keto Asian Flavours is more than a Facebook group and a KZbin channel. It’s a community with our own test kitchen. We work together to find a solution when a recipe isn’t always successful for everyone. As a hobbyist keto recipe developer, I have some great members and followers who would go above and beyond to help resolve issues when one of my recipes isn’t successful for everyone. I’ve asked Shirlene K. to test a couple of batches of the ricelesss paper recipe to confirm humidity issues. Sin Man took it to another level and used a dehumidifier to dry the keto riceless paper. Read their comments and tips below. Thank you both for sharing! “Back in April 2021, I tried these keto rice papers twice and they were both failures. Not only did they not dry after 48 hours, but mold even started growing on them. Being culinarily challenged, I was sure this was not for me so I gave up entirely. Until recently I saw some people in the group talking about humidity. So I decided to give it another try (third time!) by drying the rice papers next to the dehumidifier. I was expecting another failure but IT WORKED!! To my surprise, the rice papers dried after 14 hours or so, with the dehumidifier running for ~12 of those hours. I didn’t have trouble peeling it off the plastic plate, the dehumidifier did the job for me. I was so excited, I made my keto rolls the next day and ate all 6 of them in one seating. They tasted like the real ones, I’m not even kidding… I just made another batch, the mixing/tempering just keeps getting easier. I might actually be addicted now…” - Sin Man, KAF member & KZbin supporter “If you live in a humid place (60%+ humidity), this recipe will not dry correctly. I’ve tested it 2 times, the first time over 2 days, it was 55-65% humidity was really high 65-85%, it took 3 days to dry 4 out of the 8. The others weren’t dried and started to mold. So basically, if you can’t get them to dry by 24-28 hours, then it won’t work. What a wonderful fix. I've seen people ask if a dehydrator could be used, but it became too dry. But using the same principle, a dehydrator COULD jump start the process if one does not have a dehumidifier to do the entire process. I've not tried it yet but I'm keen to try. I'm thinking a fan driven dehydrator on the lowest heat setting just for an hour or so could drive off most of the moisture and the letting it set to finish up. or perhaps on again off again over time. Another thing I'd thought might help are those hanging herb mesh tubes with multiple trays with a zip close front. I saw some on Amazon. It might prevent dust from landing on it as it dries and allows air flow from all directions. just some ideas.

Thanks for the awesome introduction to Arabic gum. This is a fun ingredient to play around with. Firstly, the texture is surprisingly authentic to the original product. It is elastic, transparent, chewy. The saltiness is to perfection. It took me more than 24 hours (around 36 hours) but I think I made the layer too thick. The dried texture takes shape and imprint of whatever I used for for molding. I used cling-on wrapper as a mold and my daughter can’t tell if it’s food or plastic :) I used t he bottoms of cheesecake pans; those turned out well. Again, I need to figure out the skills to make these more perfectly. When dried, the edges get hard so I had to cut those off since it takes too long to rehydrate. The wrapper rolled and stick to itself nicely like the original product. Secondly, my young daughter loves it. She prefers this version over the original one. I’m very pleased with this recipe. Great job, KAF!

Gelatin melts at around 31-34*C or 87-93*F which is basically room temperature so I don't think anything higher than that will dry it instead it'll melt it. The egg white will probably coagulate at the higher temperatures of 60*C or 140*F needed to dehydrate it making it a weird texture too.

You're GENIUS !!!! This is beyond the usual keto solutions that I've found and it's right up my alley !!! Just one question, does it have to be egg whites ? Or can it be like a vegan protein ? Just because I'm doing vegan keto, which is a whole new level of crazy haha. I don’t want anyone to waste money, and humidity is the only reason I can think of. We all appreciate that you were able to take on the task to confirm this! For this recipe, I don’t think so. I’ve tried Xanthan gum in my early days in experimenting with this recipe and it didn’t work out (but the recipe was a bit different then). You can definitely give it a try and see how it works out for you!

My mind is blown- this is absolutely genius! I have a question for you, though- have you heard of the viral food trend of making tteokbokki with rolled rice paper? As soon as I saw this video, I wondered if I would be able to copy that trend because tteokbokki is something I miss making for myself on keto! There are many videos of this on YT, and they all involve wetting the rice paper, rolling it into a tube, and then adding it to the tteokbokki prepared sauce *just* before you're ready to eat. Would your rice paper fall apart upon being boiled? Could I add it just before taking off the fire? If I can copy this trend and make faux rice cakes, I will be over the moon!
